Sure, I've got a very simple one. How about getting your chick ready while the oven is pre-heating at 450 degrees. After washing your meat, just use a little dab of salt and some pepper/or garlic pepper if you have it. Then, use real squeezed lemon (for a tang) over the chicken. At 450 it will cook pretty fast if you have the grate at the lowest level. Make sure the chicken breast are thin enough to cook quickly. If they are thick, then cut them in half lengthwise and you shoud come up with two thin layers of chicken. This will also double the quantity of servings, if necessary. You can serve it with Success Rice and a stemed veg. OR, cube the chicken, season and throw it into a wok or deep frying pan like you would a stir-fry and with the heat pretty high, 'bout the same as a high, open flame, it'll begin cooking quickly. Get yourself your favorite type of oriental botteled sauce, (Teryaki is my favorite) and sprinkle on. Let it cook till almost done (about 15 minutes) then throw in your the veggies of your choice and stir fry everything. Success rice or Minute rice and pour the chicken and veggies over it and mix it up. Quick.

Ingredients
1 cup vegetable or chicken stock
1 cup water
1 cup long grain rice
1-1/2 cups frozen peas, thawed
1 tsp. unsalted butter

Instructions
Combine stock and water in a saucepan over medium-high heat. Stir in rice, and salt and pepper to taste and bring to a boil. Immediately reduce heat to
low. Cover and simmer 15 minutes. Add peas to rice without stirring. Cover and simmer 5 minutes, or until rice is tender and liquid is absorbed. Remove from heat and let sit 5 minutes. Add butter and fluff with a fork.

How about a nice omelet? I'd do a nice blob of butter into a small pan, whip up about 4 eggs with a tbsp of milk, salt, pepper, chives (or some canned green chili), couple of dashes of Tabasco and some; pour into pan; add some cheese and pop under the broiler for a minute till brown and bubbly; fold over and serve....yummm...think I'll make 1 now!

Quick Lasagna Soup

1 lb ground beef
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
2 (14 ounce) cans beef broth
1 (14 1/2 ounce) can diced tomatoes
1/4 teaspoon italian seasoning (dry)
1 1/2 cups uncooked corkscrew macaroni (or mafalda, if you can find it)
1/4 cup grated parmesan cheese
Cook ground beef in skillet until browned.
Pour/drain off fat.
Add garlic powder, onion powder, broth, tomatoes& Italian Seasoning.
Bring to a boil.
Stir in uncooked pasta.
Reduce heat to medium heat& cook for 10 minutes or until pasta is done.
Stir in cheese.
Serve with additional Parmesan cheese, if desired.

HERRINGS IN OATMEAL

For breakfast, herrings make a welcome change from bacon and eggs. They are equally suitable for high tea or supper. Small trout may be treated the same way.

4 small herrings
salt and black pepper
4 tablespoons milk
4 level tablespoons coarse oatmeal
100g unsalted butter

Scale, wash and clean the herrings, cut off the heads and carefully remove the backbones.
Sprinkle a little salt and freshly ground pepper over the inside of each herring.
Close the fish to their original shape, dip them in milk and coat evenly and firmly with the oatmeal.
Melt the butter in a heavy based pan, fry the herrings over gentle heat for 10 minutes on each side.
Lift the fish from the pan and arrange on individual serving plates, spoon a little butter over each herring and garnish with lemon wedges.

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.

a simple stir fry (u dont have to have any fancy pots or anything like u see on tv)just throw whole vegies into a pan and stir it ( you can add pasta if u like)
