FISH PIE WITH CHEESE CUSTARD
575g cod fillet
175g smoked cod fillet
900 ml chicken of fish stock
1 onion
3 cloves
1 clove garlic
salt and black pepper
300ml white sauce (made from fish stock as seen below)
450g tomatoes
2 eggs
300ml milk
50g Parmesan cheese
25g unsalted butter
Wash and skin the fresh cod, wipe the smoked cod with a cloth and cut both into 2,5cm wide slices.
Put the fish slices in a deep saute pan and cover with the chicken stock.
Peel and finely slice the onion, add to the fish, together with the cloves and the crushed garlic.
Bring slowly to the boil, and season with salt and freshly ground black pepper.
Simmer for 10 minutes, the remove the cod from the liquid.
Increase the heat and boil the fish liquid rapidly until it has reduced to 300ml, strain and use for the white sauce.
Flake the fish into a deep wide pie dish, pour over the hot white sauce and coat the fish thoroughly.
Skin and slice the tomatoes in a layer over the fish, and pepper well.
Beat the eggs with salt and pepper, beat in the grated cheese and milk.
Pour this mixture over the tomatoes and float small knobs of butter on the surface.
Bake for 45 minutes or until golden brown on the centre shelf of an oven marked 170 degrees Celsius.

Try some Pesto Pasta (Very easy and quick)
Sausage & Mash with thick Bisto Gravy.
Sausage Casserole (Sausages & thick Onion Gravy) done in the oven.
Pasta with Meatballs (Vegi in my case) and Tomato & Basil Sauce.
Tuna Pasta Bake. (Cook the pasta, grill the tuna a little, grate some cheese and mix into the pasta with the tuna. Serve, with a topping of crushed up ready salted crisps. Its a family favourate in our house.
Another one is Hot Dog Sausages (Vegi in our case) with mash & Ketchup inside a Tortilla Wrap (Discovered that one in Sweden at a place called Skansen in Stockholm.) Its really nice after a day in the cold!

Macaroni and Cheese with Bacon (I like to use two different cheeses or use pasta shells) Everyone loves it when I make it.
quick instructions;
cook your pasta first..(I used to forget this bit)
Melt Butter in pan add strips of bacon (4 rashers) fry for a bit, then add a tablespoon of corn flower (Or 2tblspoons of plain flower), Mix for a while.
Add about half a pint or more, depending how much your making and stir till quite thick.. not too thick.
take off the heat then stir in the cheese (bout 4cups) I put however much i want.
Pour over the pasta then mix, sprinkle with cheese and bread cumbs and bake for 20-30 mins or until its nice n crispy on the top.
you can add mushrooms or zuchinis (sp)
Also, chicken marinaded with bbq sauce, then cheese wrapped in bacon.. . really nice and simple. serve with chips or mash.
