Indian Vegetarian Dinner
Warm your guests with bowls of zesty tomato soup, fragrant with chiles, mustard seeds and other spices. For a surprising meatless main course, an entire head of cauliflower is stuffed with a mixture of vegetables, cheese and cashews and then baked. Accompany the cauliflower with steamed rice. Be sure to glaze the yogurt cake while it is still hot--the cake can then be stored at room temperature for up to three days.

Prepare a quick split-pea and vegetable soup (feel free to vary the vegetables according to your desire). Lentil crisps are a crunchy accompaniment. You can buy lentil flour at Indian markets. Shrimp are served in a curry made with coconut milk, tomatoes, spices and cilantro. Serve with steamed rice. The pepper pound cake is best eaten the day it is made.
