Wonderfully Easy Chocolate Waffles

1 cup butter
4 beaten eggs
1 1/2 cups sugar
1/2 cup cocoa
2 cups flour
1 teaspoon vanilla
1 teaspoon salt
1/2 cup water
Mix all ingredients together.
Drop batter onto a waffle iron.
Bake in waffle iron for 50 to 60 seconds on med.
setting.

Bittersweet Chocolate waffle

1 cup all purpose flour
1/4 cup unsweetened cocoa powder
1 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
1/4 cup sugar
2 1/4 ounces semisweet chocolate, chopped
3 1/4 tablespoons butter
2 large eggs
1 cup plus 2 tablespoons whole milk
1 1/4 tablespoons kirsch (cherry brandy)
1/4 teaspoon vanilla extract

Sift first 5 ingredients into large bowl. Mix in sugar. Stir chocolate and butter in heavy small saucepan over medium-low heat until melted. Pour into medium bowl. Whisk in eggs, then milk, kirsch and vanilla. Make well in center of dry ingredients. Gradually whisk in milk mixture.

Make waffles with batter (waffles will be somewhat soft when removed from pan). Cool waffles. (Can be made 1 day ahead. Store chilled in airtight container.)

Preheat oven to 350°F. Cut waffles into large triangles. Place on baking sheet. Bake waffles until beginning to crisp around edges, about 5 minutes.

Chocolate or Cocoa Waffles

Ingredients

3 ea Eggs
1 c Milk
1/2 c Sugar
1/2 ts Salt
1/2 c Fat; softened or melted
1 3/4 c Flour
1/4 c Cocoa
2 ts Baking powder
Vanilla; optional

Instructions

Sift baking powder, salt and cocoa with flour. Seperate whites and yolks of eggs. Beat the yolks, add some of the milk and blend well. Add sugar to milk and eggs, stirring to dissolve sugar. Add dry ingredients all at once. Add melted fat. Last, fold in stiffly beaten egg whites. Bake on waffle iron. Serve as a dessert with whipped cream.

Chocolate Chip Waffles:

You can serve these plain or topped with vanilla ice cream and chocolate minichips.

Cooking spray
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups fat-free milk
1 tablespoon butter, melted
1 teaspoon vanilla extract
1 large egg yolk
1 large egg white
1 tablespoon sugar
1/2 cup semisweet chocolate minichips

Coat a waffle iron with cooking spray, and preheat.

Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, and salt in a large bowl. Place milk, butter, vanilla, and egg yolk in a bowl; stir with a whisk. Add to flour mixture, stirring until blended. Beat egg white and sugar with a mixer at high speed until stiff peaks form. Fold into flour mixture. Fold in minichips.

Spoon about 1/2 cup batter onto hot waffle iron, spreading batter to edges. Cook 3 to 5 minutes or until done; repeat procedure with remaining batter.

Yield: 6 servings (serving size: 1 waffle)
