What left-overs? Someone has left-over turkey? Seriously 3-4 days around 40 degrees is about the max you should keep it.

It really depends upon what you do withit. You can take some of it and make jerky out of it... it does work. Also you could make a Turkey cassarol and freeze a portion of it. You can have turkey for as long as you want it... but I think a week of Turkey and it's time to try something else.

There was just a news special about how long to keep left over holiday meals it said 4 days and all food should be heated up until the temperature is 160 degrees. This all prevents food poisoning

Follow these steps to ensure safe handling of leftovers:
Wash hands before and after handling leftovers.
Divide hot leftovers into small units and store in shallow containers for quick cooling. Bacteria can grow rapidly during the cooling process.
Refrigerate leftover items immediately after service.
Reheat leftovers thoroughly to a temperature of 165°F. Bring soups, sauces and gravies to a rolling boil.
Don't keep leftovers more than 7 days.

I always keep it for 5 days. You might want to freeze some now for hot turkey sandwiches up the road.

In the fridge about 3 days, but you can freeze it up to 6 months. Put it in a good Freezer bag or container. I do mine in serving sizes so I can just grab what I need & make a quick meal.

I keep them about 5 days and then freeze if I haven't used it yet. I have been known to use it 7 days later and not suffered any bad effects.

Up to two days in the fridge. Remember it must be covered and kept on a higher shelf than any raw meat to avoid contamination from drips.
