Its not hard to understand. Let me give you an example. Lets say you are traveling from London to Chicago. You get on a plane at Heathrow and fly to New York, where you get on another plane to fly to Chicago. You have 2 flights, that is two times you get on a plane and fly. This would also show as two segments on your itinerary. If both of your flights have the same flight number, that is the plane lands and you stay on the same plane that you flew from England on, that would show as one segment on your itinerary.

Flight is kind of a generic term. Segment is more specific and booking and pricing is based on segments.
Esentially every different flight number is a segment. So no, one segment cannot have many flights. For the most part, flight and segment are the same thing.

Flight would be the overall trip. Segments are the breakdowns (sorry for the poor choice of word) within it. So if you have a connecting flight going out, that's 2 segments.

a flight=the trip you will make inside the plane
a segment= any part of the trip with a take off and landing

Example, if you were flying from Miami to New York then onto London, you would still call it a flight, however you would have 2 segments as you take off and land on the Miami new york part and then take off and land again on the new york to London part. hope this cleared it up a bit for you
