Yes, "of" is perfect there. No other really fits.
Edit:
If your textbook says "from", there is one possible interpretation: the stalk has been removed from the plant. If someone is holding parts of dead tomato plants, those stalks could indeed be said to be "from tomato plants". That's a different thought entirely. I suppose most who answered never considered that, probably because it is not a true statement. A green, growing tomato plant breaks easily; an old, dried stalk taken from a tomato plant is tough, and you are not going to break it easily - even with two hands.

Stalks of tomato plans can be easily snapped between the forefinger and the thumb.

I would change it to "Tomato plant stalks can easily be snapped between the forefinger and the thumb."
If it has to stay in that order then yes 'of' should be correct.

What's wrong with "of"? Stalks shoulld be changed to stems, though. Use "the" "The stems of tomato plants can ...."
Stalks usually do come from something, by the way.
