is there a special equipment that the french use in cooking? think about the chinese and their woks. how about unique cooking methods?

You would easily recognize most of the equipment "batterie de cuisine," used in french cooking. Your suspicions are correct though about technique. French cooking requires time consuming step-wise following of recipes and techniques. There are few one pot dishes. You have to know how to make roux, stocks, how to make reductions, how to deglaze, how to make sauces, and on and on. You can do it though; check out anything by Julia Child, her cook books are approachable and considered by cooking authorities to be authentic.

While most French equipment would be readily recognisable in a British kitchen, I think the French tend to use particular pots and pans for specific tasks, whereas we tend to use the same pan for everything. For example, no French cook will be without an omelette pan which is used only for omelettes, or a petit marmite which will only be used for specific stews. Cooking methods - traditional and classical. Look at "Larousse Gastronomique" for an encyclopaedic view of French cooking.

I drain the natural fats after they cook out of the meat because they contain portions which are supposed to be harmful to us. Apparently, if the fat is solid at room temp then it solidifies in our body and eventually becomes arteriosclerosis. I use non-stick cookware so I don't need to add oils usually. If i do need them in salad dressings I use various olive oils and for baking breads I prefer canola oil which is supposed to be a healthier choice. From a CALORIE perspective, FAT is FAT whether it is solid (butter, lard, shortening) or liquid (canola, olive, corn). They all have the same calories per gram. The Muse

No not really, lots of garlic, olive oil, mederrainian veggies, lots of (french) wine.....
