obivously it cant be hot as it will just get cold by the time he arrives.

My fav is poaching a piece of salmon and also making up a bit of cous cous with spring onion and chopped tomato. Let it all cool down and stick it in a tuppaware box and leave in the fridge overnight. It tastes just as nice cold the next day or if theres a microwave at work, heat it all together for a few mins.

I also love to make up some pasta, and when drained but still hot, stir in some pesto and cherry tomatoes. Then keep in the fridge overnight.

nice dressed up salads are good.. take a basic salad mix add cucumber, tomato, croutons, bacon bits, and you can add some grilled chicken to it, or even premade chicken strips then some light italian dressing and shake the bowl so it's mixed through.
Also pasta salads are good as well.. you can use some turkey day left overs for now and add turkey to some cooked spaghetti or macaroni with some cheese sause and frozen veggies.. it will only take about 10 minutes to complete.

Invest in some plastic tubs. Give him a different salad every day.

Tuna, mayonnaise, pasta and sweetcorn
Pasta, chicken, red pepper, mayonnaise
Rice, peas, peppers, pork
Tuna, boiled egg, lettuce, green beans mayonnaise
Cous cous with lemon and oil dressing, green beans and beef chunks
Noodles with prawns and spicy chilli sauce


This could be alongside a petit pain (you can buy the part baked ones and just bake one each evening) with a small pat of butter to go with them. A healthy differing meal each day.

As others have suggested a mix of salads. Also invest in a wide mouth flask for cold days. U can make curry or stew for a main meal freeze a portion then heat up and put it in flask. You could always ask him what he wants to eat.

I take cous cous salad which is just cous cous with a little feta and tomato . Its really tasty

Or make a little pasta with pesto and roasted pine nuts

You could even do stuff peppers with the cous cous above .

These are all nice cold and a bit different.

A slice of cold roast beef is very nice with some coleslaw or potato salad...
Or two mini scotch eggs, with crackers, some homous and some guacamole....
Or cold rice with peas and sweetcorn mixed in.......

When i took sandwiches to work the most i looked
forward to were cold fish ones the fish being bought
the night before at our local fish and chip shop.

Sandwiches these days are very very inventive but if your husband fancys a change then you can give him wraps with various fillings (delicious).

what i find quite useful is to make up a bowl of pasta and add small chunks of cheese,apple,ham,onion and raisins the combination is great the mix with mayo it keeps in fridge for quite a time and can be put in plastic comtainers you have your fruit fat.veg and carb in one go

Pasta, Rice, Pitta breads stuffed with his favourite fillings, tortilla wraps with his favourite fillings. Simple and just as quick as spreading bread. Chopped fruit salad..

For school dinners I always give one of the above and one day they have normal sandwiches...
