I have a glut of oranges. Has anyone got a quick, easy family recipe using oranges ? Cakes, puddings, main courses but please NOT marmlade !!

Just make a fruit salad using the oranges, canned pineapple chunks, chopped apples, red and white seedless grapes and any other fruit you like.

Another way I use oranges is to put chicken pieces in a baking dish, cover it with a layer of peeled orange segments, cut up one onion and one green pepper and add to that. Sprinkle with black pepper. Then mix 1/4 cup brown sugar, 1 tablespoon cornstarch, 1 tablespoon soy sauce, 1 tablespoon vinegar and drizzle over the top. Bake, covered, at 350 for one hour, then uncover and bake another 20 minutes. Serve with rice.

ORANGE CHIFFON CAKE

For the cake:
2 1/4 cups cake flour (not self-rising)
1 1/2 cups sugar
1 tablespoon double-acting baking powder
1/2 teaspoon salt
1/2 cup vegetable oil
7 large egg yolks
3/4 cup fresh orange juice
2 tablespoons freshly grated orange zest
2 teaspoons vanilla
9 large egg whites
1 teaspoon cream of tartar

Make the cake:
Into a large bowl sift together the flour, 3/4 cup of the sugar, the baking powder, and the salt. In a bowl whisk together the oil, the egg yolks, the orange juice, the zest, and the vanilla and whisk the mixture into the flour mixture, whisking until the batter is smooth. In the large bowl of an electric mixer beat the egg whites with a pinch of salt until they are foamy, add the cream of tartar, and beat the whites until they hold stiff peaks. Add the remaining 3/4 cup sugar, a little at a time, and beat the whites until they hold stiff glossy peaks. Stir one third of the whites into the batter to lighten it and fold in the remaining whites gently but thoroughly. Spoon the batter into an ungreased 10-inch tube pan, 4 inches deep, with feet and a removable bottom, and bake the cake in the middle of a preheated 325°F. oven for 1 hour, or until a tester comes out clean. Invert the pan immediately onto a rack and let the cake cool completely in the pan upside down on the rack. Run a long thin knife around the outer and tube edges of the pan and turn the cake out of the pan onto the rack. Using a serrated knife cut the cake in half horizontally

Try orange segments and blueberries or any berry for that matter. Sprinkle in some sugar and Grand Marnier. If serving to children leave out the Grand Marnier and replace with a splash of apple, orange or grape juice. Let the mixture sit a while. You can serve this over ANYTHING! Go for pancakes, short cake, muffins, pound cake, waffles, french toast, cinnamon swirl cake/bread...the list goes on. You can also top everything off with whipped cream or creme fraiche to make it a little more rich/fancy.

* 2 cups self-rising flour
* 3/4 cup milk
* 4 teaspoons finely grated orange peel

* 1 tablespoon cornstarch
* 1/4 teaspoon salt
* 1 cup boiling water
* 1 teaspoon butter
* 4 teaspoons finely grated orange peel
* 1/2 cup fresh orange juice

PREPARATION:
In a medium bowl beat sugar, butter, and egg yolks at medium speed until light and fluffy; add flour alternate with milk at low speed, beginning and ending with flour. Beat egg whites until stiff but not dry; fold egg whites and orange rind gently into the batter; pour into greased and floured 13x9x2-inch baking pan.

Bake at 375° for 20 to 25 minutes or until golden brown. Cool, cut into squares, and serve with warm orange sauce. Makes about 12 to 18 servings.

Sauce:
In small saucepan mix together sugar, cornstarch, and salt; pour the boiling water over mixture, stirring constantly. Cook over medium heat until mixture boils and thickens. Add butter, orange peel, and orange juice

Orange Pumpkin Loaf

"You can try this moist loaf with an orange cream spread, butter, or leave plain. For a variation, try substituting dates for the raisins."
Original recipe yield: 1 - 9x5 inch loaf

INGREDIENTS
1 large orange
1/3 cup butter, softened ( = 75 gr )
1 1/3 cups white sugar
2 eggs
1 cup canned pumpkin
1/3 cup water
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 cup chopped walnuts
1/2 cup chopped raisins

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
Cut orange into wedges, and remove seeds. Place orange, peel and all, in a food processor. Pulse until finely chopped; set aside.
In a large bowl, cream butter and sugar until smooth. Beat in the eggs one at a time, then stir in the pumpkin, water, and the ground orange. Mix together flour, baking soda, baking powder, salt, cinnamon, and cloves. Stir into batter just until moistened. Stir in nuts and raisins. Spoon into the prepared loaf pan.
Bake for 1 hour in the preheated oven, or until a toothpick inserted near the center comes out clean. Let stand 10 minutes, then remove from pan, and cool on a wire rack.

"This cake is the one my mother is preparing like a chef! It is really simple but excellent. You cannot fail it. Good luck and degustez avec bon! (The cake will look dark orange so if you use black decoration on it, it is a perfect Halloween dessert)."
Original recipe yield: 12 servings

INGREDIENTS
3/8 cup vegetable oil
1 cup white sugar
2 eggs
1/2 cup plain yogurt
2 oranges, zested and juiced
1 1/2 cups all-purpose flour
1 teaspoon baking powder

DIRECTIONS
Preheat the oven to 375 degrees F (190 degrees C).
In a medium bowl, mix together the vegetable oil, sugar and eggs. Stir in yogurt and orange zest. Combine the flour and baking powder; stir into the mixture just until blended. Pour the dough into a greased 9x13 inch baking pan.
Bake for 30 minutes in the preheated oven, or until a knife inserted into the cake comes out clean. Poke holes in the cake with a knife, and pour the juice from the oranges over the cake slowly until it has all been absorbed.

Why not juice them and then freeze the juice.

You could make ice lollies/icy poles. You can buy special plastic containers to do this. You could also freeze into ice cube shapes and use these for other drinks. Or just freeze it to use when you don't have a glut of oranges.

I assume you still want it to be asian-themed? Try taking chicken breasts and glazing them with a mixture of approximately 2 parts orange marmalade to 1 part soy sauce- then do rice and veggies. you can always alter the sauce to your taste
