I have a question about "Chinese fried walnuts", to mix sugar with the walnuts before deep frying them in oil, will the sugar still coat the walnuts? The sugar will dissolve in the oilm right?
The recipe I have for "Sweet and Crispy Walnuts" is --- to deep fried the cooked walnuts for 1 minute (till crispy), drain well, stir fry the walnuts in a clean wok with 1 tablespoon of water (just to moist the walnuts' surface) and add icing sugar & toss quickly till all walnuts are lightly coated. Place them on a plate to cool, the sugar will become white and crispy.
I would like to post some recipes here that are simple, quick and easy but not straight from a box, you can prepare these stir-mix-chill desserts within 20 minutes (excludes chilling time) and I hope you would like them.
<<<<<< Chocolate Salami >>>>>>> Cuts into 25 slices
250g plain chocolate
100g butter
3 tablespoon clear honey
100g ground almonds
100g dried apricots, finely chopped
50g toasted chopped nuts
200g amaretti biscuits, finely crushed
1) Break up the chocolate and cut the butter into cubes. Put the chocolate, butter and honey in a large bowl. Microwave on Medium for 3-4 minutes, then stir until the mix is smooth and glossy.
2) Stir almonds, apricots, nuts and three-quarters of the biscuits into the chocolate mix. Leave to cool, then chill for 1-2 hours until the mix is firm enough to shape.
3) Spoon the chocolate mix along the length of one sheet of greaseproof paper then wrap the paper around it. Once the mix is enclosed, roll it to make a neat sausage about 25 cm long.
4) Chill roll for 30 minutes, spread remaining biscuits over second sheet of greaseproof. Unwrap chocolate roll and use your hands to roll it over the biscuit crumbs so it is evenly coated. Wrap in greaseproof again, then over wrap tightly with foil, twisting the ends to seal. Chill for at least 2 hours until firm or overnight.
5) To pack for school, you can frozen the "sausage" then let it defrost in room temp. in the class room. Let the teacher to unwrap roll, slice into thin rounds with a sharp knife, and serve the kids with milk. Or you may wrap slices with little plastic bags then place in a paper box for easy distribution.
Chocolate salami (see below photo) can be kept in the fridge for a week or freeze for up to 1 month and you may serve it with ice-cream & fresh mix berries.

6 tablespoon tropical fruit juice
2 tablespoon rum or brandy
2 banana
8 thin slices bought Madeira cake
2 tablespoon Belgian chocolate sauce
4 heaped tablespoon Marchant Gourmet's Banoffee Toffee
225g tub mascarpone (Italian cheese)
250 ml or 9fl oz chilled custard (from a tub)
block plain chocolate (any type or size)
1) In a large bowl, stir the tropical fruit juice with the rum or brandy, Slice the bananas into the fruit juice mixture and toss together
2) Sandwich the slices of Madeira cake witht he chocolate sauce, dice it into little squares and pile in the bottom of four pretty glasses.
3) Top with the banana and rum mixture, then add a heaped spoonful of Banoffee Toffee to make another layer
4) Next, beat the mascapone and custard together until smooth (add a bit icing sugar in it, if you like your dessert sweeter), then spoon on top of the mixture. Chill for up to 2 hours.
5) Before serving, run a potato peeler down the flat back of the chocolate bar to make shavings and scatter these on top of the trifles
<<<<<< Summer mix fruit Jelly >>>>>> Serves 4
4 apricots, stoned and halved
100 g / 3.5 oz green grapes
250 g / 8 oz strawberries, hulled and halved
250 g / 8 oz fresh or canned cherries, stoned
60g / 2 oz gelatin dissolved in 125 ml / 4 fl oz hot water, cooled
200 ml / 7 fl oz water
900 ml / 1.5 pt apple juice (you may adjust the taste by adding 100 ml white wine with 800 ml apple juice)
1) Place apricots, grapes, strawberries and cheeries in a bowl and toss to combine
2) Place gelatin mixture, water and apple juice in a bowl and mix to combine. Pour one-quarter of the mixture into a lightly oiled 1/1.75 liter capacity mould and top with one-quarter of the fruit. Refrigerate until set.
3) Repeat with remaining liquid and fruit. When jelly is set, unmould (with a warm towel warming up the base of the mould a bit and slide the jelly out) and serve, garnished with extra fruit if desired
Note: you may add any fruit you like in the jelly but avoid pineapple, papaya and kiwifruit as they contain an enzyme which prevents jelly from setting
Here is a warm dessert for winter time

2 bananas, cut into small cubes
1/4 lemon juice
1 tablespoon honey
cinnamon powder
spring roll wrappers (1 cut into 4 small wrappers)
beaten egg
cooking oil for frying
icing sugar
1) mix banana, lemon juice, honey and cinnamon powder in a bowl as filling
2) Place spring roll sheet with one point toward you, moisten upper edges with egg mixture.
3) Spoon filling in center of wrapper and fold bottom up to cover the filling, fold over left and right corners so they meet in the center.
4) Roll up, seal the final corner with egg mixture. Repeat with remaining spring roll wrappers.
5) Heat the oil in wok (or fryer) to 160 degree C, test the heat with bamboo chopstick, when you see bubbles around the chopstick, it means the oil is hot enough, carefully put 3 or 4 rolls in the oil, deep fry for 2 minutes or till golden brown on all sides.
6) Remove, drain on paper towel, sprinkle icing sugar before serve with vanilla ice-cream

Ingredients
5 oz (150g) Butter - softened
5 oz (150g) superfine (castor) sugar
6 oz (175g) self-raising flour
3 eggs
1 tsp vanilla extract
2oz (50g) chocolate chips
Method
1. Pre-heat the oven to 350oF (180oC).
2. Line a 12 cup cake pan, with cup cake papers.
3. Crack the eggs into a cup and beat lightly with a fork.
4. Place all the ingredients in a large bowl.
5. Beat with an electric mixer for 2 minutes, until light and creamy.
6. Divide the mixture evenly between the cake cases.
7. Add the Choc Chips and mix through.
8. Bake for 18-20 minutes until risen and firm to touch.
9. Allow to cool for a few minutes and then transfer to a wire rack.
10. Allow to cool fully before icing.
Notes
Makes 12 cakes.

a friend gave me this recipie. i really like it. good luck =) STRAWBERRY KROPSUA 1 pint strawberries 1/4 c sugar 1 egg 1 1/4 T sugar 2/3 c milk 1/3 tsp vanilla 1/3 c flour 1/3 tsp oil 1/3 T powdered sugar Slice strawberries and mix with 1/4 c sugar and refrigerate (I don't do that part. Instead I slice the strawberry into sections but not all the way through so I can fan it out on top of the dessert.) Heat oven to 425º and place a 7" cast iron skillet in the oven for 10 minutes while making the batter. Beat egg and 1 1/4 T sugar in bowl with a mixer. Then add the milk and vanilla and continue to beat. Add flour and incorporate with a wire whisk. Take the skillet out of the oven, brush the inside with oil and pour batter into the pan. Bake in the oven 20 minutes until fluffy and golden on the edges. Remove from the oven and let set 10 minutes. Sprinkle with powdered sugar, slice, and pour on a spoonful of strawberries over each serving. (Again, I just spread out the one strawberry over the top - looks pretty)

Chinese Fried Walnuts
6 cups water
4 cups walnuts
salad oil
1/2 cup sugar
salt
Bring water to a rapid boil. Add nuts. Boil nuts for 2 minutes.
Drain nuts in a colander and rinse with hot water. Return nuts to pan (no heat) add sugar and mix well.
In an electric fry-cooker, heat 1 inch salad oil to 350 degrees. Add half of the nuts to the oil and cook for 5 minutes. With a slotted spoon, remove nuts from oil and place them in a wire drainer. Cook the other half of the nuts the same way. Salt lightly.
Store in an air-tight container.

BANANAS FOSTER (for two)- In a frying pan, 1 tbsp Butter, 3 tbsp Brown sugar and two bananas sliced length wise and halved. Cook on moderate heat adding rum and a pinch of cinnamon until bananas soften and the sauce begins to thicken (Caramelize). Remove from heat and serve over Vanilla ice cream (in large red wine glasses is nice) and serve immediately.

Apple-of-Your-Eye Cheesecake
1 cup graham cracker crumbs
3 Tbs. sugar
1/2 tsp. ground cinamon
1/4 cup butter or margarine, melted
2 Tbs. finely chopped pecans
FILLING:
3 pkg. (8 oz. each) cream cheese, softened
3/4 cup sugar
3 eggs
3/4 tsp. vanilla extract
TOPPING:
2 1/2 cups chopped peeled apples
1 Tbs. lemon juice
1/4 cup sugar
1/2 tsp. ground cinnamon
6 Tbs. caramel ice cream topping, divided
Sweetened whipped cream
2 Tbs. chopped pecans
Combine the first five ingredients; press onto the bottom of a lightly greased 9" springform pan. Bake at 350 degrees for 10 minutes; cool. In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs; beat on low just until combined. Stir in vanilla. Pour over crust. Toss apples with lemon juice, sugar and cinnamon; spoon over filling. Bake at 350 degrees for 55-60 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen. Drizzle with 4 Tbs. caramel topping. Cool for 1 hour. Chill overnight. Remove sides of pan. Just before serving, garnish with whipped cream. Drizzle with remaining caramel; sprinkle with pecans. Store in refrigerator.
Yield: 12 servings

Bake your favorite cake. After it cools, tear it into bite size pieces. In a large glass dish or bowl, layer cake pieces,2 boxes any flavor of prepared instant pudding that will go with the flavor of cake. Start with a layer of cake, then a layer of pudding, cake then pudding ect... til cake is gone. Top the mixture with whipped frosting. For an added touch, sprinkle some broken bits of candy like toffee pieces or anything you feel will go well with whatever flavor you chose.

make some vanilla pudding, let it set so it gets thick. Then add crushed oreos, and fold in whip cream. My boyfriend's mom made it for Thanksgiving and it was a hit. Everyone loved it, especially the kids. She said it didn't take much time to make either.
