This is the simplest I know and it's also the best...my family never tire of it...
Make a base by mixing a packet of digestive biscuits, [ bashed into crumbs] with melted butter, or buy a ready made base which can be sponge or sweet pastry.
Using an electric beater mix together a can of sweetened condensed milk, a pint of double cream and the juice and grated rind of three large lemons. Reserve a sprinkling of the rind.
Pour onto base and leave in fridge until needed. Sprinkle on rind to serve. Enjoy!

Graham cracker crust.simple buy a ready made one. To make one.. buy a box of graham cracker crumbs 4 oz. melted butter ( melt the butter , let it stand and seperate use only the oil at the top as the excess water and whey will amke for a softer crust. ) mix crumbs + $ oz. granulated sugar + melted butter mixture should form a somewhat firm ball when squeezed toght. For a 9inch pan use approx. 2 cups. Use the bottom of something flat to press the crust in the bottom of the pan, set aside... using 3lbs. ROOM TEMP. cream cheese + 4 large eggs also ROOM TEMP + 1 Cup of granulated sugar. you will need at laest a 5 qt. bowl. cream chees in bowl scrape bottom often add sugar scrape bpwl again. add eggs 1 at a time scrape after each addition. add 1 tsp. of flavoring of your choice. van. lem. orange. etc. stir. transfer to prepared pan. place pan in roasting pan filled 1/4 way with warm water place pan in the oven at 325 degrees for 1 hour and maybe 15 min. check after one hour if it begins to get brown on top simply cover the whole pan with another sheet pan but not touching the cheesecake.when the cake is done it should spring back to the touch like jello. there should be no sway in the center. Cool overnight. using a small knife run it around the inside of the pan to loosen set the pan on the burner of the stove with the heat on low to heat the base of the crumb crust. using a cake board anda plate. place the board on the top of the cake invert it onto the board and the flip it over onto the plate. garnish with fruit if you like or simply cut and enjoy.

Easy Lemon Cheescake
Base
Bash a packet of biscuits into crumbs (or process) add 2 tblspns melted butter mix well, put in bottom of spring form pan - refrig. (Roll a glass to get the crumbs flat)
Filling
500gms cream cheese at room temp in mixer and mix till soft (about 2 mins) While still mixing, add juice of 1 lemon, 1 tspn vanilla, 1/3 cup sugar, 1 tblspn gelatine dissloved in warm water.
In a separate bowl whip 300ml carton cream and fold through cheese mix. Pour into chilled crust. Refrig 2-3 hours or overnite. Top with strawberries, mango slices or whatever takes your fancy. Enjoy!

this recipe is called "Oreo CheeseCake" Prep. Time: 1:50
Serves: 12! ingrediants:2 Tbls. melted butter OR margarine
1 1/2 cups Oreo® cookie crumbs
1 1/2 lbs. cream cheese - room temperature
1 cup granulated sugar
5 eggs - room temperature
1 cup sour cream - room temperature
1/4 cup all-purpose flour
2 tsp. vanilla extract
1/4 tsp. salt
15 Oreo® cookies - coarsely chopped, divided
RECIPE:-Combine butter and cookie crumbs; press evenly into the bottom of a greased 10" springform pan; set aside.
-Beat cream cheese with an electric mixer until light and fluffy.
-Beat in sugar, then eggs.
-Stir in sour cream, flour, vanilla, and salt.
-Gently stir in 5 chopped cookies.
-Pour mixture into springform pan; top with remaining chopped cookies.
-Bake on the top rack of a 325 degree oven for 75 minutes.
-Turn off the oven, prop the door open several inches, and allow cake rest in oven for 1 hour.
-Refrigerate overnight.

Dark, sweet cherries offset the filling and crust for a dramatic look and the best taste.
Cherry topping:
2 cups pitted dark sweet cherries
1/4 cup sugar
1 tablespoon fresh lemon juice
2 teaspoons cornstarch
Crust:
1 1/3 cups chocolate graham cracker crumbs (about 9 1/2 cookie sheets)
1/4 cup sugar
1 tablespoon butter or stick margarine, melted
1 large egg white
Cooking spray
Filling:
1 cup fat-free sour cream
1/2 cup fat-free sweetened condensed milk
1 (8-ounce) block 1/3-less-fat cream cheese, softened
1 (8-ounce) block fat-free cream cheese, softened
1 1/4 cups sugar
3 tablespoons unsweetened cocoa
2 teaspoons vanilla extract
2 large eggs
1/2 cup semisweet chocolate minichips
36 dark sweet cherries, pitted and halved
To prepare the cherry topping, place 2 cups cherries in a blender or food processor, and process until smooth. Combine the pureed cherries, 1/4 cup sugar, lemon juice, and cornstarch in a small saucepan. Bring to a boil, and cook 1 minute, stirring constantly. Pour cherry topping into a bowl; cover and chill.
Preheat oven to 350°.
To prepare the crust, combine crumbs, 1/4 cup sugar, butter, and egg white in a bowl; toss with a fork until well-blended. Press crumb mixture into the bottom of a 10-inch springform pan coated with cooking spray. Bake at 350° for 10 minutes; cool on a wire rack. Reduce oven temperature to 300°.
To prepare the filling, combine sour cream, milk, and cheeses in a large bowl. Beat at medium speed of a mixer until well-blended. Add 1 1/4 cups sugar, cocoa, vanilla, and eggs; beat well. Stir in minichips. Pour cheese mixture into prepared pan. Bake at 300° for 50 minutes or until almost set (center will not be firm, but will set up as it chills). Turn oven off; cool cheesecake in closed oven 40 minutes. Remove from oven; cool on a wire rack. Spread cherry topping over cheesecake. Top with cherry halves. Cover and chill 8 hours.
Yield: 16 servings

Follow the Philadelphia recipe on the box, but buy a spring form pan (Walmart) and you'll be in cheesecake heaven in less than an hour.
