Because the "Church" that you mention is the Roman Catholic Church, which used the writings of Paul as the foundation of Christianity.

I am assuming you mean conversion of Paul- but it was one of the highest moments in the church because up until then the Gospel was not preached to Gentiles, only to the Jews.

Paul's mission was to preach to the Gentiles!

I think you mean conversion, not conversation.

Paul was one of the biggest persecutors of the church, and after his conversion he became one of the biggest soul winners ever. And he wrote nearly two thirds of the New Testament, a lot of it while in jail for his beliefs.
