Option one: Sauce for ham or roast pork: Mix equal parts whole berry sauce and crushed pineapple with a little juice...heat gently and serve over ham or other pork. Can also add a few raisins and a dash of cinnamon or ginger. This will freeze.

Option two: Prepare a small package of strawberry jello with 1 1/2 cups boiling water. Add one cup whole berry cranberry sauce, one small sliced banana, and 1/2 pint frozen sliced strawberries, semi-thawed. Stir until berries are completely thawed. Add 1/2 cups chopped pecans and pour into a glass dish. Chill until set.

option three: This is not about cranberries, but maybe somebody out there would like this tip. My best leftover option after any good meal has always been to make frozen dinners. Wal-Mart or similar stores sell small Rubbermaid-type divided containers. Fill these compartments with your favorite freezable foods. Turkey, dressing, gravy, ham, mashed potatoes, sweet potatoes, bean casserole all freeze well. This really saves time and money. These little dinners taste mighty good in a couple of weeks for lunch or supper. Just microwave like you would any frozen meal.

Actually I did the following for my thanksgiving dinner. After eating it I realized it would work well as a sweet and savory dip for crackers, triscuits or corn chips. I also realized that it is a perfect way to utilize leftover cranberry sauce.

For the exact recipe you will need 2 cans of (preferably) whole berry cranberry sauce.
1-8 oz. pkg. cream cheese
1/2 cup of chopped pecans
2 tbs. mayo

Toast up your pecans in a pan. Be careful, they burn easily. Mix with room temp cream cheese and mayo. Open up your cans of berry sauce and mix so that it is mashed up. Layer the bottom of a casserole with one can then spread on the cream cheese and nut mixture...layer the other cans worth of sauce on top of that. Refrigerate for a couple of hours and presto. You have a nice layer dip.

This recipe is extremely versatile. The ingredients can be adjusted any way you like to accomodate how much you have. For instance: If you only have one can of suace just half the recipe. Simple.

This is really easy and tasty!

Cranberry Oat Squares

11/2 cups rolled oats
11/2 cups all-purpose flour
1 cup brown sugar,packed
3/4 cup butter or margarine
1/4 tsp. baking soda
14 oz. cranberry sauce

Measure oats, flour, sugar, margarine and soda into bowl. Mix together until crumbly. Pack large half into greased 9x9 inch pan.

Spread cranberry sauce over top. Sprinkle with remaining crumb mixture.Press down with your hand. Bake in 350 F oven for 35-40 minutes until a rich golden brown. Cuts into 36 squares.

Good served warm with some ice-cream

If you know how to make crepes you can make a yummy turkey crepe and a cranberry orange sauce to top it with. melt the sauce with some orange juice and top the crepe with that.
