Can you get a copy of "The Joy of Cooking"? There's a good diagram in there, with detailed instructions.

It's not cruel if the rabbit is deceased.

We make a slit in the belly and take out the guts...there isn't much, you can pretty much just pull it out. Then we break all four legs and just pull the hide off. You can cut or twist the head off. Sorry if that's graphic, but it's how it's done.

To cook it we usually stuff it with bay leaves and bake it.

chop off the feet,tail and head
slit down the back-get fingers in the slit then pull---turn it inside out and it'll pull the skin right off
make a shallow cut from breast bone to pelvic area----pull out ALL the guts and organs and intestines
best to crack open the pelvis with a heavy knife and make sure you cut out the anus and reproductive organs
clean well under running water
