Each has qualities worth admiring.
Of the ones i know personally....
Buddhists - very peaceful and at peace with themselves, Christians are generous, Muslims are faithful, Pagans love nature. Atheists are generally scholarly and non-judgmental.
I have not really known any Jews or Hindus personally. I see some people wearing Stars of David and there is nothing to single them from everyone else - they all seem friendly.
You can find bad among individuals or even groups of each as well.

I admire the peace and discipline of many Buddhists. I admire the caring for the earth of Pagans. I am a Hindu, so no need to go on about what I admire about Hinduism. ;-) Christians are good and loving people for the most part. Jewish people really find a lot of meaning in life and have a very practical outlook on this world. And in fact, the Jewish outlook has enhanced my life more than I can explain. Muslims have a modesty which I totally admire. Atheists are willing to believe in what they believe is truth, even if it leads to unhappy ideas (like believing there's no life after death), and they do care about morality generally.
In all these, I see beautiful expressions of devotion, to either God, or to fellow humans.

there's a difference between spirituality and religion. a spiritual person maynot be religious and a religious person ,maynot be spiritual. the uniting factor in all religion is the spirituality, which all leads down to unconditional love to god that is manifested as love to mankind. a religious person mayb an extremist at the same time another religious person could be spiritual. religious is external in nature, spriritual is internal in nature. sometimes some atheist r even better human beings as they hold values like truth and love more dearly than religious ppl. they may not love god but surely god loves them.i believe that one day atheist will come to believe the existance of a higher force. like einstein said, where science ends. spirituality begins

The best quality worth admiring in a religious person . They practise their religion and at the same time let other practise other's own religion,and not make such an issue over it. I hate hypocrites.

Atheists usually have a good, logical, scientific mind, and are able and willing to question "dogma" (something that many religious people are unable or unwilling to do).
If you want to take it a step further - there's a lot to be said for the fact that most atheists are good people WITHOUT the threat of eternal damnation if they do something "wrong".
"Doing the right thing because it's the right thing to do" IMHO requires a stronger character than "doing the right thing because you'll be in trouble if you don't."

people believe in god for many reasons. one may be their fear of mortality. other reasons may be because they can only conceptualize that creation must have had a creator. but belief or faith is not a good or bad quality--it's a state of thinking. it's actions, deeds, and kindness, love, and respect for life that are the most admirable qualities as i see them. atheists can love just as well as a person with a religious belief. it's easier to love someone next to you than in a place only you can imagine, or only in your imagination, if you will. i have answered several of your questions honestly, and i hope you see my sincerity and good intentions. my beliefs in what i do are decent.

Buddhists ..... they are centred , peaceful and loving
Pagans ... they have a great respect for the earth and all that inhabits it
Hindus ... i dont know much about as yet but have found them to be peaceful
Jews .... actually i love their humour which isnt a religious quality as such but i love it lol ... but i have found them to be very tollerant also
Muslims .... i have found to be respectful to others and loving
Atheists i have seen to share most or sometimes all of the qualities above at times

I admire people who know a great deal about their faith, who have studied it well.
I also admire people who admit they do not know or understand *everything* about their faith, for that shows humility.
I admire people who see the beauty in the path of another, regardless of whether they themselves would choose to walk that path.
I admire people who are willing to admit that there is much validity in the teachings of other faiths and show respect for adherents to other faiths.
I admire those who live their faith honestly, day in and day out.
