Pot Roast with Prime Rib.

Heat oven to 350, rub roast with minced garlic and italian seasoning and pepper. Add 2 cups beef stock to baking dish and add potatoes (quartered) onions (quartered) carrots, parsnips (peel the carrots and parsnips) Rosemary sprigs and bake for a couples of hours for 3.5 pounder. Make sure you cover your roast with some aluminum foil. Remove aluminum foil 30 minutes before done.

Sauce-Brown Gravy-you can get a packet in the sauce section. Also Bearnaise will go really well with this dish. (knorr)

Side dishes Green Beans and Tarragon (the tarragon will compliment the bearnaise sauce, since they both use the same herb)

Perhaps saute some carrots in butter add some pearl onions-you can get these in the frozen section. Add some fresh thyme, brown sugar and a little bit of coco powder. (unsweetened)

Appetzizers-Smoked salmon mousse. Sour Cream, Whipped cream cheese, smoked salmon, chives and puree in food processor-serve with cucumber, crackers and fresh bread.

Cream cheese with a sweetened salsa dumped on top is bright and cheery.

baked brie-Be careful only have the oven set to 250 and watch closely. Unwrap brie slice down the center of brie to create a sandwich-you can put brown sugar in the center or for something more savory, some basil pesto or sundried tomatoes. Buy the cheapest brie you can find as there is no sense in using a an expensive brie if all you are going to do is bake it.

Crab saladi- it is crab season. Go to your market and ask for some crab meat -fresh!-add some zest of lemon or orange-just a little extra virgin olivte oil-chives or green onion-green onion may have a little more flavor, but the chives are easier to deal with. Serve in phyllo cups (bake them first and keep at room temp.) You can buy these at your grocery store too.

Go to food network.com-several of my friends use that site and love it because they have simple recipes-which don't have a lot of ingredients.

Ziplock omelet
To make a Ziploc omelet, you will need one quart sized Ziploc freezer bag, two large or extra large eggs, and whatever fillings you like in your omelet, such as cheese, ham, bacon, or even mushrooms, peppers, and onions. Crack the two eggs into the Ziploc bag, seal it up, and knead it with your fingers to “scramble” the eggs. Then, drop in the fillings, roll the air out of the bag, and zip it up tight. Place the bag in a pot of boiling water for exactly 13 minutes. After the time is up, remove the bag from the water . Open baggie and your omelet will then slide right out onto your plate, ready to eat. It’s amazing! It makes a nice, fluffy omelet with a lot less fat than regular cooked omelette's. ambrosia fruit salad!

3 (15-ounce) cans chunky fruit cocktail, drained
1 (11-ounce) can Mandarin oranges, drained
1 cup miniature marshmallows
1 cup sweetened flake coconut
2 bananas, thinly sliced
2/3 cup NESTLÉ® CARNATION® Evaporated Milk
1 cup sliced fresh strawberries

Combine fruit cocktail, oranges, marshmallows, coconut, bananas and evaporated milk in large bowl. Refrigerate for 30 minutes. Stir in strawberries before serving.

Makes 6 servings.

I think this will taste even more delicious with a couple of chocolate chips thrown in. mmmm.

there's no way you can mess up this one and it's easy! you don't really "cook" it but you will get credit for it!

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.

1 bunch broccoli
1 bunch cauliflower
1/2 lb. bacon, browned and crumbled
1/2 c. parmesen cheese
1 c. miracle whip
salt and pepper
sm. onion, diced

Chop broccoli and cauliflower into bite sized pieces. Mix all together and chill.


Roasted Garlic Scallopped potatoes
1 (19 ounce) can creamy potato with roasted garlic soup
1/2 cup heavy cream
1 teaspoon dried thyme
1 teaspoon freshly ground black pepper
6 large potatoes, peeled and sliced
2 1/2 cups shredded Cheddar cheese, divided

Preheat oven to 350 degrees F (175 degrees C). In a blender combine soup, cream, thyme and pepper; process until smooth. Spread a thin layer of the mixture on the bottom of a 9x13 inch casserole dish. Layer potatoes with cheese, ending with potatoes and reserving 1/2 cup cheese. Pour soup mixture over potatoes and sprinkle with remaining cheese. Bake in preheated oven for 70 minutes.



Hashbrown Casserole
2 lb. bag of frozen hashbrowns or french fries
1/2 cup onion chopped
2 can cream of chicken soup
2 8 oz cartons sour cream
1 block cream cheese - softened
2 cups shredded cheddar cheese
6 oz bag one step stuffing
1/2 cup margarine - melted
1/2 teaspoon paprika

Preheat oven to 350. Place the hashbrowns in baking dish. Sprinkle chopped onion on top. Mix together soup, sour cream and cream cheese in separate bowl. Spoon that over the potatoes and onions. Sprinkle the cheddar cheese on top of soup mixture. Next, melt the butter and mix with the stuffing and paprika. Layer this on the very top. Bake for approximately 1 hour or until potatoes are tender.


SQUASH CASSEROLE
1 large onion, chopped
3 c. squash, cooked & drained well
1 c. Ritz crackers, crushed
1/2 c. sour cream
salt, pepper & garlic to taste
1 c. cheddar cheese, grated
TOPPING:
2 c. Ritz crackers, crushed
1/2 c. butter, melted

Preheat oven to 350 degrees. Sauté onion in butter for 5 minutes. Remove from pan and mix all ingredients together. Pour into greased casserole dish and top by melting 1/2 c. butter and mixing with 2 c. crushed crackers. Bake for 25 to 30 minutes.


Super Macaroni Salad
1 16 oz box macaroni cooked,drained and cooled
1 1/2 cups good mayonnaise (Hellmans, Kraft's,etc)
1 cup white vinegar more or less
1/4 cup shredded carrots
1/4 large green pepper finely chopped
1/8 cup minced onion
1 cup sweetened condensed milk
1/ 2 cup sugar

Pour the macaroni in a large bowl, add the veggies including the onions, set aside. In a smaller bowl mix remaining ingredients, taste, it should have a nice sweet and sour flavor, add more sugar or vinegar until you like the taste. Then pour over the macaroni veggie mix, blend well and put in fridge until ready to serve.
