In the stores it stays smooth, but once you bring it home, it seems to go hard.

Try storing the honey at room temperature, refrigerating will make it crystalize(harden) faster. To get it back to a liquid, just heat it up. The microwave will work, but be careful if it's in a plastic jar, because you could melt the jar! Setting it in warm water also works.
You can still eat honey once it has crystalized. Honey is naturally antibacterial, and if it's stored properly, will never go bad!

Use a hot spoon to get it out or buy the squeeze bottles. You can get great quality honey in squeeze bottles and if you use it often, it will not harden or crystallize. Honey does not go bad, so even if it hardens up a bit, you can safely use it. Hot water is the best choice, some of the containers should not be microwaved.

Why don't I want Honey hard at home? - oh wait you mean the syrup - my bad. Store in a cool dark area and use in 60 days if crystallizes or becomes to thick open lid and place in a cup of boiling water for 5 minutes to reconstitute.

that is really the best way to eat honey. it tastes better when it crystallizes. and Honey is the only food that never spoils.
Thanks for the idea, I am going out right now to buy some honey and get that crystallizing going.

honey crystallizes when it gets old, put the jar in a pan of water and heat it until the honey returns to it's liquid state, and ALL of the crystals are desolved , it will stay this way for awhile, but eventually you will have to melt it again

do not put it in the fridge. if it is hardened place the jar in a bowl of hot water. it will soften it. and remember honey doesn't spoil or go bad..it need not be refrigerated

You can always microwave it or place it in a pot of simmering water. It'll become silky smooth in a matter of minutes and no harm done.

if it gets hard put it in pan of water on the stove and heat until it becomes clear and smooth again. don't put in the fridge.

mabye because of the weather, from keeping it from harding you may want to store it in a good room tempurature.
