Brisbane and Gold Coast. Population wise, it is only the 3rd largest city, but the people are much friendlier then the mostly arrogant and ruthless Sydneysiders. Brisbane has nice street malls in the city, and lots of small suburbs for quality cafes and restaurants scene.
Otherwise, Melbourne is great, but the weather is pretty cold, so, not sure if that considers as a chosen destination.

you have to check out brisbane or brisvegas as its called by locals. Check out www.ourbrisbane.com.au for more details. It has all the qualities you mentioned and its really laid back place. Heaps to do and great people. When anyone talks about Queensland you will notice that brisbane will be at the top of their list as the best shopping area in a metro location. Good luck with your essay.
