A neighbor gave me a leftover turkey dish that was awesome.
She cut pieces of turkey and mixed them in with the dressing she had made and added some of the gravy she had: She placed all of this in a casserole dish and baked. It was so good and so easy. I would never have thought anything could taste so good. (Of course, I did not get a turkey dinner so may be that is why it tasted so good.)
In the past, I have just always made the turkey sandwich using a little sweet pickle relish and mayo and add the dressing in and I love that for a sandwich.
I bet you find some really good ones on this site.

Baked Turkey Salad
The Recipe
Rating: Rate this recipe
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Servings: 4
Ingredients
2 Tbsps. olive oil
1 cup celery\cooked, thinly sliced
1/2 cup onion\cooked, chopped
1/2 cup mayonnaise
1/2 cup sour cream
1 Tbsp. lemon juice
1/2 lb. cooked turkey breast, cut into cubes
1/2 cup slivered almonds, toasted
6 oz. canned mushrooms, drained
1/4 cup seasoned breadcrumbs
Instructions
Preheat oven to temperature 325°F. Heat oil in a large heavy nonstick
skillet over medium heat. Add celery and onion and sauté 4 minutes,
or until tender. Remove from heat and stir in next 3 ingredients until
well blended. Season with salt and pepper to taste. Add turkey,
almonds and mushrooms. Toss to coat well. Transfer to an ovenproof
casserole dish and sprinkle with breadcrumbs. Bake 25-30
minutes.

Chili Blanca (White Chili)
Thanksgiving leftover turkey, shredded or cut into bite-sized pieces
1 large can & 2 small cans of white beans (mix of cannellini, white kidney, and/or small white)
1 32 ounce box plus a bit more low sodium chicken broth (or broth made from cooking the turkey neck & giblets)
1 onion, chopped
1 large garlic clove, minced
3 - 4 1/2 ounce cans minced green chiles
1 long hot green pepper (plus some jalepenos if you want it spicier)
cumin to taste
white pepper to taste
Saute the onion, garlic, and pepper(s) in a little oil in a dutch oven. Add remaining ingredients & simmer at least 1/2 hour.

How about a Turkey Shepherd's pie? I made one last year and it was yummy. All l did was chop up the turkey and mix it with some leftover gravy, stuffing, corn, peas and carrots, put it in a cassorole dish, and covered it with my leftover mashed potatoes. Then I popped it in the oven and heated it up. Really easy. It's one of those recipes that isn't a recipe so you can pretty much wing it and just use what you have and it will taste delicious!

I hope you saved the bones. Strip all meat off them, cut them up, and put them in a stock pot with sliced carrots, celery, and chopped onions. Add enough water to cover, and simmer for 3 to 4 hours. Strain the liquid, and remove the fat. You've got turkey stock for soups.
Warm some mashed potatoes, turkey, gravy, and leftover vegs in a microwave. Put a slice of your choice of bread on a plate, and top with warmed sliced turkey. Put a glop of warmed mashed potatoes on the plate, and a glop of warmed vegs. Pour some warmed gravy over the potatoes and turkey. Easy hot turkey sandwich.
Cube up some meat, and add to a pan with some frozen mixed vegs (corn, peas, broccoli, etc) along with about a cup of water. Bring to a light boil. Meanwhile, bake some biscuits you get in tubes at the grocery store. Add a can of condensed Cream of Chicken or Cream of Mushroom soup to the turkey/vegs and lightly boil another 5-6 mins, then thicken with cornstarch or arrowroot dissolved in a little water. Break the biscuits in half and plate. Pour some of the turkey/veg mixture over them, and enjoy.
Grind or mince some meat. Add mayo, a little yellow mustard, relish, and minced onion and stir. Spread your mixture on your choice of bread or toast, and have a turkey salad sandwich.
Now that you're getting toward the end of your leftovers, put the turkey broth in a pan, and add sliced FRESH carrots, celery, diced onion, broccoli, etc. Simmer for an hour or so, then add some cubed meat and continue heating. Do you like turkey vegetable soup?

Heres one for ya!
Easy Turkey Casserole
1package Stove top stuffing chicken
2 cups chopped cooked turkey
1 can of cream of chicken soup, or cream of mushroom works too.
1/2 lb american cheese torn into small pieces.
Preheat ovento350, Make the stuffing mix as directed on package. Stir in remaining ingredience & mix well.
Bake about a half an hour, or until heated through & cheese is melted.

"Swanson Turkey Noodle Soup Express" - Serves 4
2 (14 1/2 oz.) cans Swanson Chicken Broth
Generous dash pepper
1 medium carrot; sliced
1 rib celery; sliced
1/2 cup uncooked medium egg noodles
1 cup cubed cooked turkey
Mix broth, pepper, carrots and celery in saucepan; heat to a boil. Stir in noodles and turkey. Cook over medium heat 10 minutes or until noodles are done.

Take 4 cups of milk and heat on stove and thiken with flour then ad turkey pieces salt pepper onion powder and garlic powder. butter toast and put creamed turkey over the top it is very good and very simple

Cook a 16oz package of Spaghetti noodles. Heat 3 jars of Ragu Alfredo sauce with turkey pieces shredded into it. Add a little seasoning salt to the sauce. Pour the sauce over the noodles. You can use two jars of sauce but I like a lot of sauce on mine.
