Would you add a little lemon or white vinegar along with the garlic and black pepper I threw in?

No, I wouldn't. You could try it and it would probably come out tasting delicious, but why mess with it if your marinade tastes great? My favorite way to cook salmon is to not marinate it at all--just cook it, then through some freshly made lemon/ herb butter on it. Yum yum.. I think salmon is just good !

No, add lemon slices when you serve the fish. Vinegar will ruin the wine taste.

That might make it too acidic since the wine is acting as you acid. if it tastes delicious you might want to leave it as is. keep the garlic and black pepper.
