Spicy Indian-Style Potatoes

Ingredients
20 baby new potatoes, halved
1/4 cup vegetable oil
1 small onion\cooked, sliced
2 cloves garlic, crushed
2 tsps. fresh ginger, grated
2 Tbsps. mild curry powder
1 tsp. mustard seeds
2 tsps. lemon or lime juice
1/4 cup water
Instructions
Place potatoes in a steamer basket over boiling water. Cover pan and cook about 10 minutes, or until tender. Drain. Heat oil in a heavy nonstick pan over medium-high heat. Add next 3 ingredients. Cook, stirring, until onion is soft. Add next 3 ingredients; cook, stirring, until fragrant. Add potatoes and water. Cook, stirring, until potatoes are heated through
Carrot Soup with Spinach

Ingredients
1 lb. carrots\cooked, scrubbed
1 small parsnip, peeled and chopped
1 small onion\cooked, peeled and quartered
1 celery rib, cut into 2 inch pieces
3 cups vegetable stock
1/4 tsp. nutmeg
1/4 lb. spinach leaves\cooked, rinsed and tough stems discarded
1 cup cheese & garlic croutons
Instructions
Combine first 5 ingredients in a heavy saucepan over high heat. Cover
and bring to a boil. Reduce heat to low and simmer 30 minutes.
Using a slotted spoon, transfer vegetables to a food processor or
blender. Add a small amount of cooking liquid and purée
vegetables. Return purée to saucepan with stock. Add nutmeg and salt
and pepper to taste. Place spinach in a food processor or blender. Add
1 cup of soup to spinach and
purée. Stir spinach purée into soup and serve hot with croutons.

Check out some Indian cookbooks from the local public library (Julie Sahni and Madhur Jaffrey are two well-known cookbook writers).
I am not a vegetarian but work with a lot of Hindus and the stuff they bring to company potlucks is to DIE for. I think Indian vegetarian cooking has to be about the best.
It's not expensive (you'll need to invest in some basic spices and aromatics) and doesn't call for any fancy equipment.

try falafels with hummus! my favorite thing in the world.
just google some recipes for some if you want to make your own or get them from the box- these are great, too but it does depend on brand. i think greek and middle eastern food will become your best friend because most are tasty, healthy, and veggie based.

use zucchinni, tofu, eggplant, and large mushrooms as meat substitutes. theyre filling ,cheap, easy to prepare and all have a meaty texture. they are all rather bland tasting veggies and they take on the flavor of whatever you cook them in/with. some kinds of squash and beans are also good choices. dont forget rice--excellent value and very filling. the brown and wild have a nutty meat like taste and texture. brown and wild rice cooked with pecans,mushrooms, garlic, green onions and red peppers is a very satisfying meal.

Stir-fry with tofu. $2.00 worth of tofu diced up makes about 5 meals. High in protein, low in fat, interesting texture, takes on the taste of the veggies and soy sauce, browns nicely, served over rice- cheap, nutrish and filling!

take all ur fav veggies season them to ur taste then put then in tin foil then gril them soo good eat it all the time
