This is my cousin's recipe. He's won a chili contest against 250 other competitors with this recipe!
JW’s Big Daddy Chili
4 lbs. Ground Beef
¼ cup Chopped onion flakes
1 Tbsp. salt
½ tsp. Black pepper
¼ tsp. or more tsp. red pepper (optional)
2 Packets McCormicks Chili Seasoning
¾ cup Water
¼ cup Heinz 57 sauce
3 15oz cans Tomato Sauce
1 15oz can Red beans (drained)
Turn large crock pot on high, and put 1 can tomato sauce in it while it’s pre-heating. Brown the ground beef, drain off all grease. On a medium-low heat, add 1 can tomato sauce, all of the dry ingredients and the water, to the ground beef and stir. Let it cook for 5 minutes, then start transferring to the crock pot, stirring in the rest of the tomato sauce, the 57 sauce, and the beans. Cook on high for 4 hours, stirring periodically. Reduce to lower heat and serve with your favorite garnishments when the chili temperature gets just right. NOTE: It’s even better the 2nd day when reheated!

Cincinnati Chili
1 quart chicken broth
2 lbs ground chuck
1 teaspoon ground cinnamon
1 teaspoon ground cumin
2 large chopped onions
1 fresh garlic clove
1 teaspoon worcestershire sauce
2 tablespoons chili powder
1 teaspoon canned black pepper
1 teaspoon salt
1 1/2 teaspoons ground allspice
1/2 teaspoon ground red pepper
1 (6 ounce) can tomato paste
1 1/2 teaspoons cider vinegar
3 large bay leaves
1 whole red bell pepper
2 (16 ounce) cans dark red kidney beans, drained and rinsed
In a large cooking pot, over medium-high heat, break up the burger into the chicken stock.
Add all the remaining ingredients except for the bell pepper and the kidney beans, bring to a boil, and then lower the heat to a simmer (slightly bubbling).
Cover, and allow the chili to simmer for three hours, stirring often.
At the end of three hours, remove the garlic clove and the bay leaves and drop in the red bell pepper (or, substitute a jalapena pepper if you prefer just a litle heat).
Simmer for two more hours, again stirring often.
At the end of the two hours, remove the whole pepper and add the drained/rinsed kidney beans. Simmer for one additional hour, covered, and continue frequent stirring.

Five Alarm Touchdown Chili
1 lb bacon, chopped
4 lbs lean beef chuck roast, cubed
1 1/2 lbs regular hamburger, preferably chuck
1 lb ground turkey
4 cans kidney beans
8 whole cloves
4 medium onions
4 cloves garlic
6 ounces canned chilies, chopped (El Paso brand)
6 fresh jalapeno chilies, chopped
6 chipotle chiles, chopped
7 tablespoons dry Mexican chilies, freshly ground,anaheim if possible
3 tablespoons chili peppers (good quality)
2 tablespoons paprika
6 tablespoons fresh cumin seed, ground
1 1/2 tablespoons fresh black pepper, ground
2 tablespoons Tabasco sauce
3 tablespoons Worcestershire sauce
2 bottles beer (Canadian)
2 cans tomato paste
2 cans stewed tomatoes
Fry bacon in a heavy pot till crisp and the fat is rendered.
Remove and reserve bacon.
Pour off most of the bacon fat into a heavy cast iron skillet, leaving a small amount in the pot.
Brown the meat and garlic in the skillet.
Saute onions in the fat remaining in the pot until soft.
Add the meat, bacon, ground chilies, dried spices, the sauces, green chilies, Jalapenos, chipotle, beer and tomatoes.
Simmer for two hours.
Add remaining seasonings and sauces during cooking, as you check and stir.
Make sure last ingredients are added with at least one hour of cooking time remaining.
Allow the chili to sit in the refrigerator for 24 hours to give the spices a chance to intensify.
It is okay to serve it right off the stove, but it is almost always better as leftovers.

Chili Con Carne-Casa Rio Recipe
1 lb pork, 3/4 inch cube
3 lbs beef, 3/4 inch cube
1 1/2 tablespoons ground jalapenos
1 1/2 tablespoons ground fresh garlic
1 tablespoon salt
1 tablespoon ground comino
6 tablespoons fresh ancho chilies, pods seeded and ground
2 teaspoons black pepper
6 tablespoons good quality chili powder
Rue
made from masa flour
water, as needed
Deseed and clean ancho chili pods.
Soak for 1 hour in hot water.
Drain and grind.
Reserve.
Placee pork and beef cubes into a large stock pot.
Fill with water to cover meat.
Bring to a simmer over medium high heat.
Add jalapenos, garlic, salt, comino, ancho chili pod paste and pepper.
Bring to a boil.
Reduce to a simmer and cook until meat is done.
Add chili powder and mix all ingredients well.
Simmer for 20 minutes.
REmove from heat and thicken with Masa rue.
Don't leave out the rue. The masa gives it a special flavor you won't have without it.

Brian's Chili
2 cans Chili Beans in Hot Sauce (Bush's pref)
1 can Tomato Juice (Campbells pref)
1/2 a white onion
1 jar Hot Picante Sauce (Pace pref)
1-3 lb Stew Meat (to taste)
Combine all ingredients in crockpot and cook 4-6hrs on low.

Here are two very different recipes. The first one takes less time. The second one won a chili cookoff at my friends Super Bowl party a few years ago.
Chili Blanca (White Chili)
8 boneless chicken breasts, grilled (or use Thanksgiving leftover turkey), shredded or cut into bite-sized pieces
1 large can & 2 small cans of white beans (mix of cannellini, white kidney, and/or small white)
1 32 ounce box plus a bit more low sodium chicken broth
1 onion, chopped
1 large garlic clove, minced
3 - 4 1/2 ounce cans minced green chiles
1 long hot green pepper (plus some jalepenos if you want it spicier)
cumin to taste
white pepper to taste
Saute the onion, garlic, and pepper(s) in a little oil in a dutch oven. Add remaining ingredients & simmer at least 1/2 hour.

Beef Chili with Bacon and Black Beans
8 ounces of bacon (about 8 strips), cut into 1/2-inch pieces
2 medium onions, chopped fine
1 medium red bell pepper, stemmed, seeded, cut into ½-inch dice
6 medium cloves garlic, minced or pressed through garlic press (about 2 tablespoons)
¼ cup chili powder
1 tablespoon ground cumin
2 teaspoons ground coriander
1 teaspoon red pepper flakes
1 teaspoon dried oregano
½ teaspoon cayenne pepper
2 pounds 85 percent lean ground beef
2 cans (15 ounces each) black beans, drained and rinsed
1 can (28 ounces) diced tomatoes, with juice
1 can (28 ounces) tomato puree
Salt
1.Fry the bacon in a large, heavy-bottomed non-reactive Dutch oven over medium heat, stirring frequently until browned. Pour off all but 2 tablespoons of the fat, leaving the bacon in the pot.
2.Add the onions, bell pepper, garlic, chili powder, cumin, coriander, pepper flakes, oregano, and cayenne and cook, stirring occasionally, until the vegetables are softened and beginning to brown, about 10 minutes. Increase the heat to medium-high and add half the beef. Cook, breaking up pieces with a wooden spoon, until no longer pink, and just beginning to brown, 3 to 4 minutes. Add the remaining beef and cook, breaking up pieces with a wooden spoon, until no longer pink, 3 to 4 minutes.
3.Add the beans, tomatoes, tomato puree, and ½ teaspoon salt. Bring to a boil, then reduce the heat to low and simmer, covered, stirring occasionally, for 1 hour. Remove the lid and continue to simmer 1 hour longer, stirring occasionally (if the chili begins to stick to the bottom of the pot, stir in ½ cup water and continue to simmer), until the beef is tender and the chili is dark, rich, and slightly thickened. Adjust the seasoning with additional salt.

"Western Chili" - Serves 8 to 10
3 cups dried red beans
6 cups water
2-3 bay leaves
2 lbs. ground beef
1/2 lb. pork sausage meat
3 cups chopped onions
3 tsp. minced garlic
1 tbsp. chili powder
3 (8 oz.) cans tomato sauce
1 tsp. red pepper flakes
1/8 tsp. curry powder
1 tbsp. ground cumin
1 tbsp. salt
1/4 tsp. hot pepper sauce
1/8 tsp. cinnamon
Soak beans overnight. Next day, drain; place in large pot with the water and bay leaves. Cook about 45 minutes, until tender; drain.
Brown ground beef and sausage meat with onions and garlic about 10 minutes; drain. Add to beans, along with chili powder and remaining ingredients; simmer 1 hour. Discard bay leaves.
