185 degrees F. for fresh pork.

170 for corned pork.

Let it stand for 20 minutes prior to slicing.

Buy a meat thermometer--the kind with a sharp metal prong on
the end. When cooking any roast, put the thermometer into
the center of the roast-not touching any bone. Use the estimated time in your recipe. If you have no recipe check it
after about 45 mins. at 350 degrees. The smaller your roast,
the faster it will reach proper DONE temperature. Most
thermometers read 170 o for pork. I believe the new pork can
be out of the oven at 155-160o, You never want to eat any
"pink' meat pork tho.

155 degrees F. You should let it stand for 15 minutes after removing from oven and the temp should be 160 degrees F.
