My husband is English. His mum used to make a Kidney Yorkshire Pudding. From what he told me, the pudding was a bit denser than regular Yorkshire Pudding. The kidneys were sliced and baked on top of the pudding. Any ideas on how to make this? Also, I am a yank, so I have no idea how to prepare the kidneys before baking them. Thanks.

Well, the word is "gross" not grose.

With kidneys, you boil them a good long while for a start. I prefer my yorkshire puds without kidneys myself.

But if you must, after you boil the p___ out of them, slice then grill. Use the juice left from grilling to make the pudding (or bacon grease).



For the pudding;


1 cup all-purpose flour
1 cup whole milk
2 eggs
1/2 teaspoon salt
3 tablespoons beef drippings (or kidney dripping or bacon grease)


Mix together the flour, milk, eggs and salt in a bowl.. Using an electric mixer, beat 5 minutes, until smooth. Refrigerate with bowl covered while meat is cooking.

When meat is done, raise oven temp to. 425 degrees F. Coat a 9x13 inch baking pan with beef drippings. Preheat the pan 15 minutes so the drippings are hot and sizzling.
Remove the batter from the refrigerator. Beat briefly, then scoop into the baking pan.
Put the kidney slices on top at this point if you must.
Bake 20 minutes.
Lower oven temperature to 375 degrees F. Don't open the oven door. Bake an additional 15 minutes.

The pudding should be puffed and golden brown. Serve while hot, with juice or gravy.

Sounds Yummy , when you slice kidneys up make sure they are semi frozen makes them easier to slice as they dont squish when you cut them , id imagine you would just slice them up and put them on the top in a layer , I could be wrong .
