Hes a fun loving person. He likes things like riding ATV's, playing in the toy isle while Im shopping for the kids (lol), fishing, movies, ect...Im taking him to the movies, but I want to do something fun and unique also. Any ideas? (and I got the "night thing" handled - thanks :-)

Thats awesome, first off tell him happy bday for me, cuz my bday is on the same day too, I'll be 20. I suggest, if there is a go kart arena or something like that around to go participate in. Sagittarian guys by nature like physical hands on stuff. So the go karts would be awesome. Or if you just bring out some roller blades and you both skate around a park together at night after the movie.

This is the kind of guy EVERYBODY wants to try to buy gifts for! From the way you describe him he would like about any guy gift you got him! I get the sense that he likes being outside and he likes being athletic. If you want to be original it shouldn't be too hard.
My ideas for him would be stuff like:
Set up a deep sea fishing trip,
pay for him to go skydiving,
If he hunts, get him a GPS.

Hey hey hey now! That's my birthday too. Sagittarius people love adventure. Take him on a scavenger hunt or something. Maybe go have a romantic dinner outside somewhere remote (we love the outdoors).

You could take him on a "mystery" date where you take him to a special event taking place in your area...might be a circus show, or bowling, karaoke or some other special events show that would appeal to his fun-loving side.

Take him for indoor rock climbing, or something that will get his blood flowing. Most guys love thrills like that.
