It is possible, You may not be happy with the consistency. You would be better with ground turkey then shredded turkey. Most people are use to the ground up ground beef. I would suggest to make it more like a chili. You are half way there with using a sloppy joe mix anyway. Add the beans and some veggies. If you want a different feel though for your leftover turkey. try the two links below. The 1st is for Turkey Croquettes with Mushroom-Rosemary Gravy & the 2nd is for a Turkey Bolognese. Both are easy to make.

Of course you can, just use your food processor to grind/chop the meat to about the consistancy of what ground meat looks like after you've browned it, before you add your favorite sloppy joe sauce to it......they'll turn out great!!!! Still, my favorite after Tgiving meal is a Hot Turkey Sandwich, open face on sourdough bread with lots of gravy and potatoes.....Yum!!!!!

I think you can, just cut it in to small or medium sized chunks or try to shred it, I really do not care that much for Turkey, but I bet it would turn out pretty darn good. Served with a nice sour pickle and some chips yummy.

Yes. It is good! You can either chop it really fine or put the turkey in a food processor. I don't mind it in bigger chunks myself. I have also made it with chicken.
