Like the title says. An example: Japanese word Kaze means wind. note in japanese you dont spell it like that. Thats what i want, what is it called when you write japenese words in english

What you are referring to is translation and I'm not sure if there is a specific word for translating phrases or words from one language to the another other than the obvious. But there are ways of writing Japanese scripts- kanji (chinese characters), hirigana and katakana and romanji.

Maybe you're looking for the word "phonetical". It just means its spelled exactly like it is pronounced so you can say it correctly...ex. phonetic=fonetik.
