Since crab cakes will be served hot (I assume) go for a fresh mango salsa, served slightly cooled, therefore, being able to be made ahead. I would suggest:
I large, ripe mango, finely chopped
1 red pepper, finely chopped
1 jalapeno pepper, very finely chopped
1 tablespoon fresh cilantro, finely chopped
2 tablespoons fresh lime juice
1/2 tablespoon brown sugar
Mix together and enjoy! By the way, add more lime or sugar depending on how tart/sweet you want it to be

This is dee-lish:
Dice up 2 ripe mangos.
Heat up 1 tablespoon olive oil & 1 tablespoon butter in a saute pan. Mince 2 cloves of garlic and add to oil. Cook & stir on med. low for about 2 minutes, then add the mango. Stir & cook the mango for another 2 minutes, then stir in the juice of 1 whole lime, 1 tsp. dark brown sugar, 2 tsp. salt, 1 tsp. black pepper, 1 whole jalapeno minced fine. Make sure everything is good & hot, then pour in 3 capfuls of white rum (Bacardi is fine), then stir in 1 tablespoon of dijon mustard. As an option, you can also add 1/2 tsp. of curry powder. Totally optional, tho, not everyone likes it. :)
Stir everything together well, then set aside to cool. You'll love it. If you need more liquid in the sauce, pour in about 1/4 C of O.J. Enjoy!
