If you merely extract the solidified yoke and mash it up with mayo, you might be disappointed. It needs another flavor. I know we've all been to what-can-I-bring parties and picnics and eaten a ton of those plain-Jane versions. But the truth is, it needs pizz-azz. I add Worcestershire sauce. Other recipes in the responses add other things. But the secret is mashed yokes and mayo ain't enough. I also coat the finished product with paprika or something. But to tell you the truth the Worcester sauce saves it from blandness.

after boiling your eggs, rinse them in cool water. Shell them and cut the egg in half, scoop the yolks in to a bowl. mix in some mayo, salt and pepper, soem mustard powder and mix it up yum yum yum. Then put it back into the egss and sprinkle with a little paprika! Hope this helps!
