Maybe you'll be able to decide after you've looked at a few recipes...
"Pepper and Parsley Logs" - 2 logs
1 (1 oz.) packet Hidden Valley Original Ranch Dressing Mix
8 oz. cream cheese; softened
2 tsp. EACH cracked pepper and chopped fresh parsley
Combine dressing mix and cream cheese. Divide in half; chill until firm. Roll into two 1 1/2" logs, coating one with pepper and the other with parsley. Wrap in plastic wrap; chill. Spread on crackers or bread.
"Fried Cheese" - 8 servings
1 egg
2 tbsp. milk
3/4 cup dried bread crumbs
1 lb. firm cheese; well chilled and cut into 1" cubes
1/4 cup all-purpose flour
Salad oil
Pear and apple slices or seedless grapes
1) In pie plate, beat egg with milk; place crumbs on waxed paper. Coat cheese with flour. Dip cheese in egg to coat; then coat with crumbs.
2) In 4-quart saucepan, heat 2" oil to 375*. Fry a few pieces at a time until coating is lightly browned, turning occasionally. Drain on paper towels.
3) To serve: Arrange cheese on serving plate with fruit; serve at once.
(TIP: Choose a firm cheese such as Cheddar, fontina, mozzarella, provolone, Colby or Muenster.)
FRIED CAMEMBERT OR BRIE: Prepare as above, but omit flour and substitute 2 (4 1/2 oz.) pkgs. round Camembert or Brie cheese for the cheese; do not cut cheese into cubes. In skillet, heat 1" oil to 375*. Fry 1 cheese at a time until coating is lightly browned, turning once.
"Cheese Sticks" - 60 sticks
1 cup all-purpose flour
1/4 tsp. cayenne pepper
1 1/2 cups shredded Cheddar or Swiss cheese
1/2 cup butter or margarine
1 tsp. Worcestershire sauce
1) In large bowl, stir together flour and cayenne pepper until mixed. With pastry blender or 2 knives used scissor-fashion, cut in cheese and butter until mixture resembles coarse crumbs. Sprinkle with Worcestershire sauce. Using hands, work dough until mixture holds together. Shape into a ball.
2) Preheat oven to 425*. On lightly floured surface, roll pastry to 10x12" rectangle. Cut into 4x1/2" strips. Transfer strips to baking sheets.
3) Bake 6-8 minutes until golden; cool on wire racks.
"Cheese Ball"
1 (8 oz.) pkg. cream cheese; softened
2 cups shredded Cheddar cheese; at room temperature
1/4 cup chopped parsley
2 tbsp. finely chopped green onion (scallions)
1 tbsp. Worcestershire sauce
1 cup finely chopped walnuts or almonds
Crackers or fresh vegetables
1) In small bowl with mixer at medium speed, beat cream cheese and Cheddar until smooth and fluffy. Beat in parsley, green onion and Worcestershire sauce. Refrigerate 30 minutes.
2) Shape mixture into a ball; roll in nuts to coat. Serve immediately, or wrap and refrigerate until 2 hours before serving time; let stand at room temperature 2 hours before serving. Serve with crackers or vegetables.
BLUE CHEESE BALL: Prepare as above, but add 1/2 cup crumbled blue cheese along with other cheeses.
