My husband told me that when he goes to afghanistan to send him clean underwear. He's cute sometimes ;)
But there have already been some really good suggestions on here.
Homemade goodies (cookies etc)

Things to let him know you're thinking about him.
make him something to let him know that he's special, even if it's just a scrapbook of photos and stuff. He probably misses home like crazy, and that will bring him a little closer to home for the holidays.

Lip Balm, jock rash powder and sized to fit Under Armor.
ANy kind of snack that can take the trip. If you know he is single and you're over 18, a few Hottie photos in the Dukes or lingerie always helped my morale. Looking at burkas gets old after awhile.
Chewing tobacco; Skoal preferably. Even if he doesn't chew he can barter it for more useful stuff.

if you are his girl or mom and want to put some efford into it, make him a pillow or a blanket! Since deployed soldiers don't have much space to themselves, he will really only be able to enjoy something that he will actually be able to use! And sleeping with a self-made couchy pillow or blanket would bring a little touch of comfort and home to him.
