Sprinkle salt over light marks, then scrub with the cut side of half a lemon. Let sit overnight, then rinse with water. Dab dark stains with a 3 percent hydrogen peroxide solution, using a cotton swab. Wipe on a thin coat of mineral oil with a paper towel every few months or apply a nontoxic sealant made for a butcher block. Do not use vegetable oil -- it may turn rancid.

Hmm, I used to have a butcher block but never had that problem that I can remember. I'd scrub it down with either a green scratchy pad or SOS pad with hot water and Dawn. Wipe, then spray with some antibacterial cleaner, like 409 or Fantastik. Let sit a while, and wipe dry.

The SOS pad was also good for getting knife marks out of it too, and it had lasted over 40 years that way.

A regular chlorine bleach and water solution. Add a half cup of regular chlorine bleach to a bucket of water and wash and wipe down the block a couple of times and you will have a sanitized and clean butcher block.

You can wipe it with a solution of bleach and water. The bleach will get rid of any odors and bacteria. You just need about 1 ounce of bleach to a bucket of water.
