how long I need to bake duck with rice stuffing. It weights 5 lb . and what is temperature? Thanks a lot

Shoot for 325* for 2 hours.

If you have a meat thermometer just make sure the thickest part of the breast of the duck reaches 165* and also test the stuffing area.

Begin to check this in one and half hours and then check every 15 minutes after that so you don't over cook and make it dry. be sure to baste while you are checking the temp.

If you have no therm. then after 2 hours cut into the ducks leg or thigh area and see if the juice run clear rather than bloody. If clear and not mushy or raw looking then it should be done.

A thermometer is soooooooooo nice to have for meat and a nice precaution for cooking. perhaps put that desire out there for Christmas or birthday wish !!
