The best, to me, is homemade pasta, and if you have the time homemade sauce (what Italians call Sunday Gravy). All the rest (ingredients) is icing on the cake. There are some pretty good recipes at ilovepasta.com. I never met a noodle I didn't like, lol. One of the keys to cooking good pasta, is not to overcook, it should be firm to the bite (al dente), and leave enough room in the pot for the pasta to boil - not stick together. Wait for the water to boil before adding the pasta. Adding salt or oil to the cooking water is up to you.

Three-Cheese Pasta
3 cups pasta
15 ounces low-fat ricotta
2 cups mozzarella cheese, shredded
1/4 low-fat parmesan cheese, grated
1 1/2 (15 ounce) cans tomato sauce, seasoned to taste

Preheat oven to 450.
Cook pasta according to package directions.
While the pasta is cooking, heat up and season the tomato sauce (I used garlic powder and italian seasoning, but again--onion, mushroom, WHATEVER can be tossed in there. I like seasoned tomato sauce because it's cheaper than buying name-brand spaghetti sauce and I can season it how I like it).
While all this is going on, mix together the three cheeses in a bowl until reasonably well blended.
Drain the cooked pasta, add the seasoned tomato sauce, and add half the cheese blend. Stir together until pasta is well coated.
Pour mixture into greased 2-qt. casserole dish, cover with the other 1/2 of the cheese blend, and bake 10-15 minutes until cheese on top is melted and slightly brown.

My Notes on this dish:It is the easeist pasta to be made,takes less time than other pastas and is much more tasteir then the others. My parents liked it sooooo much that on that very day(their wedding anniversery)they gave me Rs.10,000.WOW!!!I became rich so can u by giving me 10 points!!!

2 teaspoon basil
2 teaspoon chillifakes
30 ml olive oil (add more if wanted)
1/4 cup grated cheese
Tomato puree or Tomato Ketchup(Ketchup is preffered)
Pene' Pasta (3 cups)
Salt
Peper
Boil the Pasta for 15 mins.pour olive oil. Mix all the indregents.Serve hot.

I can't tell if you want a prepared pasta recipe or if you just want a tip on how to cook your noodles right. If you're making long noodles, always use more than enough water so that they can swim around in there & not stick to each other.

Bring your water to a rolling boil in a large pot. Add @ least 3 tsp. salt to your boiling water, because this is the only time you can season your naked noodles. DON'T add oil to your pasta water, because #1-It doesn't really keep it from sticking, only frequent stirring does that, and #2-The oil will prevent your sauce from adhering to each noodle, which is what you want.

No matter what the directions are on the pasta box/bag, always test it about 90 seconds before the done time on the pkg. You want your pasta to have a slight chew to it. Mushy pasta is gross.

NEVER rinse your cooked & drained pasta under cold water, UNLESS you need it chilled right away for a pasta salad. This is because the natural starch & flavor on the noodles will be rinsed away & you need both.

If you're making a traditional marinara or bolognese sauce, what works for me is to drain my pasta, put it back into its pot & put back on the warm burner (make sure it's off, tho), and toss the noodles w/ about 1 ladle of the sauce & 2 tablespoons of butter. Then let your guests add their own extra sauce. Sauce is supposed to be like a condiment for the pasta, not a soup. But everyone's taste is different.

I hope this was helpful. Obviously this is my favorite subject & I make pasta @ least twice a week. Here's a quicky sauce recipe you'll love for traditional Alfredo. Much easier than you think!

Put 6 cups of heavy cream in a heavy sauce pan. Put burner on med. High. When it starts to bubble, stir & lower heat to LOW. Let it simmer for 10 minutes, stirring occasionally. DON'T let it boil over!!

Meantime, cook your pasta. My favorite is tagliatelle, if you can get it. It's a super long, lighter version of fettucine, but fettucine obviously works really well, too.

Remove the cream from the heat. Stir in 2 tsp. salt, 1.5 tsp. fresh ground black pepper, and 1.5 C of freshly grated parmesan cheese. Put your pasta in a serving dish. Make sure sauce is blended well & pour desired amount over pasta. Don't drown it, but make sure there's enough. For presentation, sprinkle fresh chopped parsley & a few chopped chives. Bright, colorful & dee-lish. :)
