Cholesterol is in every cell in the body. It has many roles and many of these are, as yet, not understood. The normal level of the adult human is about 180 mg/ 100 ml. This level rises sharply after eating since one of cholesterol's major roles is in lipid function.
Most of the chemical reactions taking place in our bodies are reactions between water soluble materials such as sugar. However, fats are not soluble in water. To get fats into a form where they react in an aqueous system they enter into complex systems where they can react. Most of these systems utilize cholesterol as a component.
Fats differ in the response that they have on serum cholesterol levels. Animal fats such as lard, tallow or butterfat tend to lead to increased serum cholesterol levels. Vegetable oils, on the other hand, tend to lower serum cholesterol levels.
An experiment conducted about 45 years ago, and was not fully understood, involved feeding a fat free diet for two weeks and then switching to a test diet. When unhydrogenated vegetable oil was fed as the test diet, the cholesterol level stayed low i.e. about 150-160 mg/ 100 ml. When the only change in the diet was to use a hydrogenated form of that oil, cholesterol levels rapidly rose to 230 mg / 100 ml, and above. Thus you can run into cholesterol problems on a cholesterol free diet.
Some people have non-diet related high cholesterol levels. Cholesterol is easily synthesized in the body and these people apparently have some error in the system that regulates their cholesterol levels. I hope that you can see by this rather brief response that the area of cholesterol metabolism is rather complex.
