Turkey (or ham) Enchiladas are absolutely wonderful, and you don't feel like you're eating leftovers, again. Plus they are the easiest things in the world to make. Just buy tortillas, enchilada sauce, shredded Monterrey jack, shredded Cheddar, and cream cheese, onion (or any other things you want, like jalapenos, olives, etc.). Tear turkey, epically dark meat, into little bits. Spread sauce over tortillas, add ingredients, roll up, and bake at 350 until warmed through. You may even sprinkle more cheese on top! Yummy!!!

Turkey & Stuffing Casserole

A delicious, filling casserole that takes only a few minutes to put together. Almost as tasty as Thanksgiving dinner, with a lot less trouble!

1 1/4 cups boiling water
4 tablespoons melted butter
4 cups seasoned stuffing mix
1 cup raw broccoli
2 cups cubed cooked turkey
1 (10 3/4 ounce) can cream of celery soup
1/2 cup milk
1 cup shredded monterey jack cheese
1 cup shredded American cheese

Add water and melted butter to stuffing, mix.
Cover bottom of 9x13 baking dish with stuffing.
Arrange broccoli and turkey over stuffing.
In separate bowl, mix soup, milk, and 1/2 cup of each kind of cheese.
Pour over broccoli and turkey layer.
Sprinkle remaining cheese over soup layer.
Bake at 350 for 30 minutes.

In my house, we make what we call "Turketti". Just boil some macaroni (or any type of pasta), then drain it and add 1 can condensed cr. of chicken soup, 1 can condensed cr. of mushroom soup, and some shredded cheddar cheese. Then dice up some turkey and mix it in. Throw it all in a pan and pop in the oven until heated through. If you want, you can also crush up potato chips and put on top before you put it all in the oven. It's really easy and tastes great! Good Lcuk!

we made turkey chop suey afew times & it was good you can either buy the bok choy, napa cabbage, & savoy cabbage & bean sprouts separate or you can buy a bag of chop suey mix. I like to sautee a little garlic & onion first, then just cut the turkey in to bite size pieces & if you have any turkey juice left simmer in it if not you can use either a can of vegie, chicken of turkey broth. after that is warm add the rest of your veggies add some soy sauce & pepper if you like. if you lik it thicker, add some corn starch stirred in a cup of cold water add to mixture & cook a few minutes more ac be serve with white rice

A great easy dish for the ham is to bake a casserole type dish. Using sliced potatoes, evaporated milk, brocolli and velvetta, add a little mrs. dash or salt/pepper to season to your taste, let cook covered in oven till potatoes and brocolli are done. And there you have it a quick easy meal. It's my favorite w/ left over ham. Good Luck

My favorites for ham are split pea soup in the crockpot, and scalloped potatoes with ham. Or even a 15 bean soup. They're also good in omelets and fritattas.
