It's a Myth. St George is Christianity & the Dragon is the Pagan religions.
St. George slays the Dragon & saves the virgin. It means that Christianity overcomes Paganism & saves the people.

he's not famous and liked because he killed a dragon. the slaying of the dragon represents the deeper meaning of why he's holy. the legend of St. George slaying the dragon is allegorical. it represents goodness over evil, Christianity over paganism, order over chaos, etc. notice that in most (if not all) icons of the slaying, the spear and St. George's hands aren't in any position to actually kill the dragon, indicating the symbolic nature of the story.

The story was metaphorical. The dragon was eating people and symbolized evil; St. George was the hero who saved everyone and symbolized man's savior. He was loved because he saved everyone from becoming the dragon's dinner.
