Jack's body has a spring inside the cloths, box has a latch to hold the lid that holds Jack in.

The musical crank has a arm connected to the latch and when at the finish of song a part of the musical drum has a catch for the arm to pull the latch releasing the lid and POP goes the weasel

As the previous people have said, it's a simple spring pushed down into a box and held there by a catch on the lid. When this catch is released, the force of the spring causes the lid to fly open and the "jack" pops out of the box.

It is a wonderful example of "stored" or potential energy. The energy required to force the spring down is stored in the spring and released when the lid opens.
