It was derision for the gentlemen fashion of American men in those days.
--------------------
Stuck a feather in his cap / And called it macaroni - "Macaroni" refers to Italian and French fashion, which the colonist thought he could approximate by sticking a feather in his outdated or bizarre, by European standards, cap.
--
Surely, the lyrics do not make much sense -- why would a Yankee Doodle stick a feather in his hat and call it macaroni? Several hundred years ago, the word "macaroni" had two meanings. The first was, of course, the pasta dish we all love so much. The second was a fashion style popular among young men at the time. It was from the second meaning that the macaroni penguin got its name.
4 The macaroni penguin does not wear a hat. But it has long, colorful feathers on the top of its head. When the explorers first saw the bird and its pretty headdress, they thought about the fancy hats they liked to wear. So they named the bird "macaroni penguin."

At the time of the Revolutionary War, "Macaroni" was a very fancy ("dandy") style of Italian clothing which was popular in England at the time. So, if somebody just sticks a feather in his hat and thinks that is "Macaroni," you know he's really doomed to failure. "Doodle" means simpleton or fool.

this was a song which reflected the British Troops attitude towards the American soldiers at the time. The British considered the Americans as uneducated, uncouth barbarians and made fun of the Americans, especially at first. they learned the hard way they should never underestimate the enemy.
