In Tess of the D'Ubervilles there is a part where a rooster (okay, it's not technically a rooster but the filters won't let me use the real term) crows three times. This alludes to the instance in the Bible where Peter betrays Jesus before a rooster crows three times.

In Ray Bradbury's story "A Sound of Thunder" life coming from ashes is mentioned. This alludes to the pheonix, a mythological bird that was reborn from fire.

One could probably say that one of the most alluded to things is the Bible. TONS of literature uses themes from the Bible. Another biggie is Shakespeare, many authors use themes from him.

If you want me to use examples that aren't in books I've read...
A character exclaims that "Madness is divinest sense and those that don't agree with the crowd are called crazy" they would be alluding to the Emily Dickinson poem "Much Madness is Divinest Sense". Also, if someone comments that "A rose by any other name would smell as sweet" they are alluding to Romeo and Juliet by Shakespeare.

Watch the scene in TOY STORY 2 where the toys are in the Barbie Jeep racing down a toy store isle. Rex, the green dinosaur, gets bumped out and then must chase the Jeep to get back. (You can probably see where this is going by now.) The next shot is a close up of the Jeep's rearview mirror and in its reflection we see Rex's gaping maw while he yells, "Wait!" This is obviously allusive to JURASSIC PARK (part one) when the T-Rex chases the Ford Explorer and roars in its mirror. Although this is allusive it is more accurate to call it a/n homage or parody.
