Once I've selected something with the eliptical marquee tool, how do I delete the white background, just leaving the object which I've selected?

On the menu select Marquee, select inverse. Ctrl+I on Windows. The marquee will then reverse to the other areas not originally selected. Select another layer and then hit Delete. That's it.

Once you have made your selection go to select menu and then hit delete. That should do it. If you feather the selection first (same menu) it gives a nice effect

You don't, command c, command n, command v will copy the oval and paste it onto a new page which will be the same size as your copy.
