Well, there is the Melia Cabo Real (not the Melia Los Cabos). It is a 15 minute drive outside of Cabo, but very swank. Nice beach, very few hawkers on the beach. It is right next to La Concha Beach Club. The only two negatives are 1)The restaurants at the resort suck... horrible filets and over priced (though tasty) breakfast buffet served outside. 2)Either a 15 minute drive or crazy cabbie ride to and from town (though plenty of cabs are available.)

I personally prefer Solmar. It at Land's End. The beach is deserted. It is well within walking/stumbling distance to downtown, but still feels secluded. The food is very good. The downside... It is on the side that has a strong current and swimming isn't safe. Other than that, you have the entire beach to yourself with a great view of the cliff mansions of Pedregal.

I like to stay at The Hilton - the beach is gorgeous, and we got a great deal, it wasn't very expensive at all. It's right next door to Las Ventanas, which is the swankiest, most expensive place there - so you get all the same beach for a lot less money. To get into town, you just go out front and wait for the bus, it costs $1 and takes about 5-10 minutes. Once you're in town you can walk around everywhere. You get the best of both worlds there!
