i've been wondering for a while what you call the kind of creature Ursula is from the little mermaid. Disney made a lot of stuff up when the made the movie i know, but everywhere i've see she is only refered to as a "sea witch."
This does not seem satifactory as a species classification.

already many people have said octopus or squid. i think this is only half-right. octopi do not have human torsos and steal people's voices, just like fish do not hold concerts and wield tridents that can blow eels up (to the best of my knowledge).
She can't be just an octopus just like merfolk are not just fish.

Try this theory:
She is a Sea-Witch, which of course means she's an evil being. One of the most dangerous, and to some, the most frightening, of sea creatures is the octopus, with its eight tentacles, sucker pads along each one, its one eye, and a mouth under its body.
With that in mind, it's only natural for the animators at Disney to use that image for Ursula. Which means there might not be a specific classification.
But since I have nothing to go on but my own imagination, take what I said for what it was, a theory.

In the DVD guide, Ursula is named an octopus despite only having six arms. However, as one could consider her human arms as the other two, it would then make eight.
Ursula's original design was not that of an octopus. It was thought that she would be another sea creature, such as a rockfish. The production team, however, saw a documentary about octopuses, and decided that their multiple tentacles and overall imposing appearance would be perfect for the character they were creating.

Ursula is a sea witch as you mentioned. She has a purple upper body and her lower body is made of octopus tentacles.
But she has only 6 tentacles. Counting her arms makes it a total of 8.
In the DVD guide for the little mermaid, she is classified as an octopus.

Octopus is the best I can come up with. I had a little brother pass away the day after Christmas in 1991 and this was his favorite movie. He was only four and called her a "octogon" beings that math is so prevalent in our family.

I believe she is either a squid or an octopus, having watched the film. She tends to go about in a veil of black ink, which would make sense if she were one of the above.
