What is the short cut for minimizing, and maximizing windows?

Window key+m will minimize the window and
windows key + d will maximize.Also in Windows, when a window is selected, you can press Alt+space+"n" to minimize, and
Alt+Space+"x" to maximize.Use windows key + shift +m for maximizing all windows.

to adjust the font size (less than or 8 or even gr8er than 110)

nothing by default, but you can dowload a program like Jumpkeys(google it) to create some.
