How about a ham? My sister is tired of ham, bored with turkey, so she's making a pork tenderloin on the grill, and is making stuffing (only now since there's no turkey, it's called "dressing") and mashed potatoes and all the other good stuff you'd usually eat on Thanksgiving.

Ham or beef is good. Maybe a cut you don't normally have so the occasion is still special. Several years ago my mother-in-law started cooking standing rib roast for Christmas instead of turkey.

Do you have religion-based guidelines to follow as far as food? If not, there is always ham. I love a good honey-glazed ham. One year I bought a duck and had it with orange sauce. Maybe make a few suggestions to your mom, she probably thinks it what everyone wants.

If it's just you and her, then I'd go for a small (2-3 lb) standing rib roast. Your meat department should be able to season it and get it ready for you to just pop in the over. Most people think prime rib takes forever to cook but it doesn't. One suggestion is to get some fresh horseradish to go along with it. Enjoy!!!
