dvd-r dvd+r are both burnable dvd's and really comes down to a compatibility issue. The manufacturers couldn't decide which format to go with so they created 2, nowadays stand alone dvd players will usually decipher either one but some will only recognize one kind, Xbox's for instance will only play dvd-r. Its kind of like the difference between Beta and VHS, but a better comparison might be unleaded versus unleaded plus, both gas, both work with almost any vehicle but one is better for some and bad for others.
dvd-ram is just another format but its a more compressed version of the other 2 and is primarily used for data storage, or for some camcorders.

DVD-R is the standard pattern from DVD-Forum. DVD+R is an alternative pattern which was originally supported by Philips and other companies. Some say DVD+R has a higher quality, however it isn't very well supported and you'll find trouble searching for an DVD+R player.
DVD-RAM is a Panasonic's alternative for DVD-RW. It can be written and re-written for almost ten thousand of times, but it can only be normally read at PC's driver, but not TV's dvd-player (except for panasonic's specific players).

ram is an older type of dvd its almost never seen anymore
