I love their chili relleno - what's the recipe?

Chili Relleno Casserole

Ingredients

1 lb. cheese, grated
3 or 4 eggs
1 1/2 C. milk
1/2 C. flour
Salt and Pepper to taste
1 can Ortega whole chilies
1 lb. hamburger meat, if desired
Methods/steps
Beat together milk, flour, eggs, salt and pepper. Layer in casserole dish: chili, then pour over milk/flour/egg mixture, then cheese. Repeat layers until all ingredients are used. Bake at 350 degrees for 50 minutes.


Chili Relleno Casserole II

Makes 6

1 7 oz. can Ortega Chilies Ö (whole)
1 4 oz. can Ortega Chilies Ö (diced)
2 Tbsp. Butter
3 Eggs
1/2 lb. Cheddar Cheese, Grated
1/2 lb. Monterey Jack Cheese, Grated
2 C. Milk
1 C. Bisquick

Preheat oven to 325¬. Combine Cheeses in a bowl. Melt butter in 13" x 9" casserole dish. Lay whole chilies on melted butter, covering bottom of dish. Sprinkle 2/3 of the cheese on chilies. Mix the milk, eggs, Bisquick until smooth, add diced chilies and pour over cheese. Top with remainder of cheese. Bake for 45 min. Or use the toothpick method.

Green Chilies Rellenos Stuffed Green Chili

Ingredients

10 ea Green chili peppers
1 x -----------batter-----------
1 ts Baking powder
3/4 c Cornmeal
2 ea Eggs, slightly beaten
10 oz Longhorn or jack cheese
1 c All-purpose flour
1/2 ts Salt
1 c Milk

Instructions

Cut cheese into slices 1/2" thick and the length of the chili. Make a small slit in chili just big enough to insert cheese(you can also poke in some slivers of onion at this point). Dip in batter and fry in hot oil or lard until golder brown. Drain and serve. May be garnished with green chili sauce if desired. To make batter, combine flour, baking powder, salt and cornmeal. Blen milk with egg;then combine milk and egg mixture with dry ingredients. Add more milk if necessary for smooth batter. Using a spoon, dip stuffed chilies in batter.
