Didn't they use sundiles to tell time back then. Well how would the sundiles work with the sun standing still?

I thought that they used the hour glass. also there would be a matter of milking time with the cattle or sheep. they don't care what is going on, their schedule would have to be kept. Also, there would be tides if near the ocean. I am sure that certain chores such as baking bread have time limits to go by also. I don't think that they would have any trouble figuring it out.
