I would think it okay, based on knowing that one can refrigerate waffle batter overnight. I have done it with no problem. Just bake your cranberry nut bread several minutes longer because you'll be starting from a lower temperature.

No - quick breads and muffins have to be baked as soon as they are mixed because of the chemical reactions that make them rise.

Yes just make sure it is tightly sealed before putting in the fridge. Take it out of the fridge and allow it to warm to room temperature or it will mess with your cooking times.
